One of the first things I was shown when I first started working as a cook was professional knife skills with your eyes closed. Sort of a parlor trick. But it's actually really easy if you have proper technique, and you don't need to see what you can feel. But I guess if I didn't know that it would seem pretty amazing. The speed and precision some of these guys have I find pretty impressive.
