I've done similar test and the mustard binder always win. I had other people making the call and they always went with the mustard binder, so for me, I'll keep doing what I've always done. Team binder. Good looking ribs!
The binder (and too much rub) can potentially block the smoke from getting into the meat. That is a possibility, but then again, opinions vary on what flavor/taste people like...
