    I live in Norway, and when I was younger I never thought "winter depression" was a real thing. I loved winter, going out skiing and what not. Now though, when I'm older, I have more obligations and less free time. It's hard to justify doing anything outside in this cold, harsh weather. Thankfully, spring is close! :)

    There's a Swedish saying: There is no bad weather, only bad clothing. I've been embracing this ideal in the last few years, and it sure helps. Even if I am not spending a lot of time outside, dressing appropriately for the temperature makes everything about leaving the house a little easier.

    Winter is a good time to do other canning projects that you didn't have time for during the crazy days of harvesting. The freezer gets cleaned out and shelves get filled up.

    This video greatly parallels “Preserving the Japanese way” which I’m reading at the moment: the author also tells how leaning into slowness of winter and change of seasons as she follows the fermentation cycles (which can be really long-term and yield results in 3 years!) makes her slow down and appreciate life more.

You're the first food CZcamsr that I started watching and you've really gotten me away from the chains of the recipe.     I found as a dog walker in Alaska. That when I’m outside experiencing the weather…it passed by so much quicker 🤷‍♂️

    Living in Texas, I think I've done the reverse of this, with summers being the times I get cabin fever. Last summer, I decided to embrace it...and part of it was new recipes that didn't involve much cooking, and making breakfasts for early morning hikes or canoe paddles on the lake before it got TOO hot. Winter fermenting time is still my fave -- and I have you to mostly thank for that! 😀

    We're homesteaders, I concur that seasonal eating is great. We do still go to the grocer a couple times a year but largely spend the winter eating things we preserved from the summer harvest while digging fresh carrots, neeps, potatoes, onions etc for fresh eating. Often my brassicas makes it through most of the winter as well and my small greenhouse provides radishes, greens, lettuces, herbs and some strawberries all winter with no added light/heat. My growing season here in NorCal is 90-110 days at best most years so it's a short season but very busy prepping for winter. Winter is a relaxing time of rest and regeneration for us.

      Is that Northern California? That's a wildly short season. Mountains? I live in Nova Scotia, and our growing cycle is 100-200 days, depending on locale.

    I live in mid-north Europe, so winters are nice and snowy, but not deadly freeing. Winter is my favorite season! I love snow, cold and the magical dissappearience of insects and flies.

    I live in South Florida, we see the summer as a dead slow time of year. Winter though is amazing. We wish we had snow though, people get excited when they see frost on the grass lol.

    I love this video. In the past I’ve hated winter and wished it would pass quickly. The last couple years I’ve tried to welcome the down time and see the darkness as a time to turn inward; a time of rest. We are blessed to have winter because it provides a season of reflection and a contrast which allows us to embrace each season with wonder and appreciation.

    coming from a temperate region, i love fall/winter, because summer/spring is too hot. We don't get freezing temps on winter! (we are always above 40°F!) So yeah I like the video a lot even if it didn't really apply for me!

    Winter is my favorite season. Gear has gotten lighter and better, and we run outside even at 38 Below. It's an expensive investment to get clothes, food, and build an environment that makes winter enjoyable. But it's worth it, especially if you live in a place where winter makes up 6 months of your year.

    Hey Mike! I recently started watching your channel again and it's nice seeing your growth from that itty bitty apartment kitchen back in the Brothers Green days. Congrats on the family & beginnings of a homestead. I'm also moving my family in the homestead direction and I picked up the Complete Ball canning book and a few dehydrating books; food preservation is a great thing to learn in the winter months. When I was growing up in northern Canada, we foraged pine tea, we went ice fishing for arctic char and made bannock on a cast iron over a flame. To this day the smell of bread and fire carried by icy -30 Celsius wind is something I miss.

    Thank you for this video Mike! I just finished Sourdough U. I loved the course and learned so very much from you. I love your positive energy and natural and kind personality. Living in the Pacific Northwest means lots of cloudy and rainy days. It makes for a beautiful place to live but it really can get one down. Having a child or a dog makes getting outdoors way more fun! Thanks for all these ideas and just sharing a bit of yourself. You always make me laugh or smile.

    I freaking loved this video! Every aspect of it. It really tied in the theme of your page with something that really might be going on in the lives of us viewers. Winter is hard for a lot of us, and looking at this period as a time to work on small projects like fermenting or whatever else at home, is great.

    As a northeasterner who tends to be on the more introverted side, I've always really enjoyed winter for many of the reasons you mentioned. The biggest thing for me is that it's a time to get organized and to work on projects/skills, without the social pressure and FOMO that tends to come with the other seasons.

    Wanna trade winter temps? It's only been 30 below for 10 days where I'm at 😁 ❤
    This is the BEST time to get into the kitchen and see what you can throw together. I made beef tallow yesterday, and today used it to shallow fry some corn tortillas that we enjoyed with salsa. Tomorrow I'm making black bean and sweet potato chili with homemade cast iron cornbread. This weekend, my adult kids are coming home to enjoy salmon stew!
    As always, we have food that we made last fall and froze for the winter (soups, seasoned chicken for quick sub sammiches, etc). Alaska is a place where you have to learn to cook with what you have. I tried signing up for many different companies to get quality produce/meat, but still havent found a place that ships up here.
    Been following this channel for a while, it's been a huge inspiration for letting go of rigid recipe following and learning basic formulas that you can mix/match and plug in whatever ingredients you have. Doordash lost money once i started following Mike 😂 Keep warm out there!

    I really like these tips. I have been really struggling lately. More so than I usually do during the winter. Likely due to having such a hard summer last year and not being able to enjoy it because I was spending a lot of time with my husband in the hospital and we weren’t able to get out and enjoy the summer and do the summer things. I never thought to take advantage of things being “slower” during the winter. While I don’t garden, I find my kids have more activities in the warmer months so we spend more time running around to all those things. Thanks for this!

    I also use winter to can up frozen harvest from summer/fall, winter squash, and dried beans. That satisfies my itch to do garden-to-kitchen stuff.

    Yeah some dark days however as a Midwester person, spent half my childhood on a windswept farm. Nowadays, I ring the bell for the Salvation Army 11 times this years-so much fun and joy. Also we participated in 4 Christmas Bird Counts in very rural areas and have a blast. Also I volunteer at a local nature preserve and work outside. I love all the seasons we have. Sure I did not go anywhere when it was a blizzard, or ice storms. But generally do not need to because our pantry is full and our freezers are too. .

    I tried fermenting, but got mold on my stuff. Need to try that again, will revisit your fermenting videos again. Living in the Cape in South Africa, something is growing all year round, so one never gets real down time for winter projects. Plus is the floral kingdom known as fynbos, which includes the proteas. The bulk flower in the wet winter, so it is a wonderful time to go onto the mountain slopes and see the proteas, pincushion, aloes etc all in full flower. Really enjoyed this video, and your many others. As with many others, I only really learned to cook in lock down and following many of your videos to a point where I can improvise as you teach it. Many thanks, my taste buds really appreciate this expanded dimension of flavours

    I have heard of the gut-brain axis and how your microbes in your gut affect your mood. However, I have not really messed around with fermentation. It is interesting to hear your story and experience with that. I will have to give it a try. Thanks Mike.

    I love my Michigan winters. Overall they seem to be getting warmer, though we just had a cold streak for a week+ of single digits & a few windchills in the negatives. If dressed properly, getting out in it is the best cure for the winter blues. It's just invigorating. Even if every inch is covered, the fresh air & exercise seems to help. The only good thing about summer is the food. As they get hotter & hotter, I feel like it just sucks the life out of me. To each their own, though, eh😁?

    Hey Mike. When I received a rain barrel the instructions stated NOT to use rain water from an asphalt roof for watering vegetables one would consume due to toxic effects. Ok for flowers and grass & trees though. FYI. Great channel.

    Being from Florida winter is actually when I get out more, haha. The weather is finally reasonable during the day and night time is perfect for bonfires or going for a walk without being eaten alive by mosquitos. Grilling outside in the winter is the best. I never understood why everyone wants to grill in the summer with the intense heat and humidity adding to the heat of the grill lol.

    Holy Basil is my go to when I get blah in my long Cdn winter. I grow it and then dry it for tea and make tinctures with it. Amazing stuff.

    I love snow and enjoy the cold because I love to cuddle under warm blankets. The only thing I don’t like at all is being stuck at home when it snows. I live in the mountains so we have heavy snowfall.

      Same where I live in Newfoundland. I have a 9 foot snow mountain right in front of my door with a path made to the front of the house. Winter here is different from where most Americans are. And we've been especially cold this winter.

      @@LifeOfNigh oh yes your winters are a lot worse than ours, even though I am in the mountains. But the last few winters have been pretty bad. For our standards, not yours. 😊 Last winter we had to call for help to get us dug out. Im just glad we never lost power. My cats, and dogs and I were able to feed ourselves with nice warm food.

    Loved this 👍 Was taken aback to see you watch "Sow The Land". With that in mind, this other channel helped me a lot because they live in Ohio & so do I, so same temperature woes. They are "More Than Farmers", they have 4 kids & only grow what they actually eat & have a really good outlook. Lov'em!

I try to take Winter as the season for large pots of soup and stews, sheet pan dinners (baked veggies like butternut squash, yam, potatoes, carrots, etc) and hot cocoa/tea/coffee. I also make sure to take my Vitamin D/K2 supplement. Summer is more for BBQ, Taco/Chili, sandwich/wraps, etc.

    I love fire as well. In primary school I made it a tradition to burn all my exams at the end of school year. Unfortunately, in high school our exams were't given to us.

    I'm in Western Australia.....we make our on sprits with split corn.......we can make 700mls of spirits for about $4 at 43% of alcohol
