    I am familiar with this dish coz i grew up in nsukka but i prefer how we eat it in the village which is cooking the ede(cocoyam) overnight outside in ite ona. Then we make ncha(palmoil,salt,pepper,limestone) to eat with it. #heaven

      O yes Kene! And that's a completely different dish. Sooo delicious! My grandma prepared the type of thick ncha that is used to eat cocoyam in my "Eating Traditional Igbo Food" video: czcams.com/video/LFodjn7RizE/video.html. In the same pot that the cocoyam is cooked we usually have Ona (bitter yam) and Ji Kpuru Kpuru (tiny pieces of yam that look like cocoyam). Chai ooo, there's food in Igboland!
      And Kene ... Nanka, grew up in Nsukka, I think I know your Mum. I met her through my Mum. Soft spoken, beautiful lady, worked in Admissions at some point? If yes, it's a small world indeed.

    I absolutely love Achicha ede, especially with fio fio😋😋. My mum just posted some to me all the way to the UK, that's how I love it 😅. Well done sis Flo, just that u always make me want to eat my phone watching u prepare those mouth watering delicacies😭😭

      Scilla you must love it as much as I do! The traditional foods I ask my Mum to gather for me, eh? Even she marvels at some of them. :D :D For some of them she needs to go to specific local markets in other towns to find them.

    Flo Achicha Ede is one food I can tell you that I have not tired. I am ashamed especially because I am a foodie. Well I will be on the hunt for it when I go to Atlanta next weekend. Thank you once again for this beautiful recipe.

      Chibuike no need for shame in this one because there are many foods in Igboland alone and we will never know or try all of them. Sadly some of them are going extinct. My quest is to hopefully document all of them so that even if they go extinct, we will be watching the videos for years to come.
      I promise to at least try making the achicha ede with the type of cocoyam that I can buy here. If I am happy with the results, I will upload.

    At home we prepare this dish with akidi (cowpea) instead of the vegetable. Mum makes sure it's rich in protein to balance the meal. 👏👏 Flo I love your channel. 💕

Achicha ede is a lovely food i even enjoyed at my childhood and that is exactly the way you deed it. but am surprised that u know this recipe because its mainly from Enugu & Ebonyi State.     So the dry cocoyam is not slimy... interesting! By the way, i did try the oiless tomato stew!!! It was excellent! Thank you so much Flo!!!!! I love these more frequent videos

      Nanoubonbon the cocoyam is boiled overnight till it turns pink, at that point its tough like yam. They now slice and dry it

      I'm glad Nanoubonbon. Thanks for always watching. Like Kene wrote, the cocoyam is boiled for about 1 hour the first day (you will still see the slime at that time) then left to sit overnight. The next day you continue with the boiling till it turns pink and the slime has disappeared. At that time you can actually eat it like yam without it irritating your throat. Then slice and dry.

      From my experience using kale (it was bitter and fibrous), I would say no. But if you like kale, go ahead and use it or any other leafy green you fancy.

    Achicha ede is healthy. Ede is low in carbohydrate, which means it will not raise your blood sugar subsequently control your body fat and keep your westline 32". Very healthy food.

      Catherine mmh now I am wondering if an oven will do a good job of drying the cooked cocoyam till bone dry. Cooked cocoyam is so soft, like dough and even if it is possible, I imagine it taking hours and hours in an oven. You can try it if you don't mind the possibility of this taking the whole day and consuming all that gas/electricity.
      I remember my grandma doing this only during harmattan, it's the perfect weather for it because sometimes ordinary sunshine does not cut it.

    You don't add crayfish? That is a must for my own achicha and i add maggi knorr too. I also prepare my ukpaka separately like i am making nkwobi and then add it to it.

      lol Kosite I am not a big fan of crayfish and the achicha ede itself has this natural smokey flavour that crayfish ruins for me. And seasoning cubes? I leave it out when not absolutely necessary, clean eating things maka na mmadu agbadabago. 😂😂😂 Biko send the Jigbo video or at least a written recipe let me prepare, enjoy and upload for my CZcams family to enjoy too. 😍😍😍

      Awww Chyoma, now next time you will not pass it by. :) This meal deserves to be tried at least once. I believe ndi Adazi should have it just that it is so traditional that this generation does not know much about it.

      All Nigerian Recipes they may have it really. I remember my grandma has made one ede meal then but she used ede ofe which was cooked overnight abi for 24hrs so that it will not 'gbakaa onu mmadu' as she said 😂😂😂. I loved it but hei, that long cooking...mba a

    Looks good! I did the Oiless tomato stew also, my sister was very impressed! Hehehehe. I wonder (I also asked you about it on instagram, but I'll ask here too) if one can use canned chopped tomatoes & tomato purée or something for the stew? Rinsing out the seeds is such a tedious task. Also, have you tried to use the pressure cooker when you are reducing the water in the tomatoes as opposed to a regular pan?

      Ricky yes you can use the canned chopped tomatoes. It's exactly the same. You know with these videos I have to do everything from scratch for those who do not have access to canned chopped tomatoes.
      No, I have never used a pressure cooker to boil the tomato puree. The way a pressure cooker works (it does not allow steam to escape) makes me think that the water will not dry as quickly as when an ordinary pot is used. At least that's how my brain processed it. LOL But I may be wrong.
      With an ordinary pot, I just set the heat to highest and it dries quickly but you need to watch it because on high heat it can easily boil over.
