바닐라 아이스크림을 넣어 찰떡 아이스를 만들었어요~
하얀 찹쌀떡에 하얀 바닐라 아이스크림이 들어 있으니 깨끗하고 시원한 느낌을 주는 것 같아요~
바닐라 아이스크림도 직접 만들어 넣었는데 시판 아이스크림을 넣어 간단하게 만드셔도 좋답니다~
아이스크림만 넣고 만드는 것 보다 스펀지 케이크 시트를 이용해 만들면 조금 더 쉽게 모양을 잡을 수 있어 좋고 맛도 훨씬 더 좋은 것 같아요~
스펀지 시트는 1cm 두께의 18cm 시트 2장 정도를 사용했어요~
꽝꽝 얼려 단단하게 먹어도 맛있고 살짝 녹으면 떡이 말랑해 져서 식감이 좋더라구요~

▶약 18~20개 분량
▶재료
달걀노른자 2개
설탕 30g
연유 100g
옥수수전분 5g
뜨거운 우유 150g
바닐라빈 페이스트 10g
생크림 250g
건식 찹쌀가루 200g
설탕 80g
소금 2g
뜨거운 물 250g
스펀지 케이크 시트
▶레시피
1. 달걀노른자에 설탕을 넣고 섞고 옥수수전분을 넣고 섞은 뒤 연유, 바닐라빈 페이스트를 넣고 섞는다.
2. 뜨거운 우유를 부으며 섞고 냄비에 넣고 약불에서 살짝 걸쭉해질 때까지 가열한다.
3. 다른 볼에 옮겨 담아 냉장실에서 차갑게 식힌다.
4. 생크림을 70% 정도로 휘핑하고 식힌 (3)을 체에 걸러 넣고 섞는다.
5. 용기에 담고 냉동실에서 6시간 이상 굳힌다.
6. 찹쌀가루에 설탕, 소금을 넣고 섞고 뜨거운 물을 넣고 섞은 뒤 랩을 씌워 전자레인지에 2분 정도 돌린다.
7. 잘 섞고 다시 랩을 씌워 2분 정도 돌린 뒤 약 5분 정도 두들겨 찰기가 생기도록 반죽한다.
8. 전분을 뿌리고 반죽을 올려 미지근하게 식힌 뒤 적당한 크키로 자르고 넓게 편다.
9. 실리콘 몰드에 반죽을 넣고 바닐라 아이스크림을 반구 계량스푼으로 떠 넣고 4cm로 자른 스펀지 케이크 시트를 올리고 반죽으로 꾹꾹 눌러 감싼다.
10. 냉동실에서 단단하게 얼린다.

100g Condensed milk
5g Corn starch
150g Hot milk
10g Vanilla bean paste
250g Heavy cream
200g Glutinous rice powder (Dry)
80g Sugar
2g Salt
250g Hot water
Sponge cake sheet

Hi, these look amazing, and really delicious! I've tried some of the recipes from this channel to bake bread and such, and they're one of the best (if not the best) recipes that I've tried!
In the comment section, I have seen some individuals refer to this specific type of rice cake as mochi. Although mochi is a type of rice cake, from what I know, the tteok (the Korean type of rice cake) made in this video differs from the Japanese mochi. If this happens to be wrong though, please feel free to correct me on this! :)

I hope this might help. After making the cream, I tasted and it was too sweet and the condensed milk taste is really strong. So I whipped more heavy cream to cut down the sweetness. It ends up really good. I guess different brands of condensed milk will give different taste and texture. So you should pour little by little and adjust it
