World's Best Fluffy Pancakes | Maxi's Kitchen

My mom’s pancakes are seriously the best, most fluffy pancakes ever! Everyone we make them for goes wild for them. Thank you for watching the video and let me know if you have any questions!
RECIPE:
-2 Cups Flour
-1 tsp Salt
-2 tsp Baking Powder
-1 tsp Baking Soda
-2 Tbs Sugar
-2 Eggs
-2 Cups Buttermilk
-2 Tbs Melted Butter
-Maple Syrup, for serving
1. In a medium bowl, add flour, salt, baking powder, baking soda and sugar - stir to combine
2. In a separate bowl, mix eggs and buttermilk
3. Pour the wet ingredients into the dry and mix together -- do not over mix! You want to have streaks of flour running through your batter (this will make the pancakes fluffy); fold in the melted butter
4. Cook pancakes on a lightly oiled griddle or pan on medium heat; you will see little bubbles popping in the batter as it cooks; once there are no more bubbles, the pancakes are ready to flip (I always peal up a corner while cooking to ensure that they are golden brown before flipping)
5. Serve with maple syrup and butter
20 minute total prep + cook time
Recipe makes 8-10 pancakes
