I was privileged to work for JG at his flagship in the early 2010s. It was tough--we were expected to be on point all day, every day-but he legitimately is *that* nice and fosters an environment where if you are enthusiastic, disciplined, and willing to learn, you will succeed. I will never forget the day he had many of his staff to a BBQ at his home north of NYC and still have a picture of all of us in his pool. Also super grateful I worked pastry and didn’t have to cut an onion 😂
He seems like a true gentleman even though he doesn’t have to be.

This chefs humbleness is unreal.... what a down to earth chef. I bet when its business time, its business. What a great episode.
I'm not gonna lie, when I think of a French Michelin star chef, I picture a pretentious person with big ego but this chef was the exact opposite. What a great man, he deserves all of his success. Even made a point to say his kitchen was a team effort. On a side note, I have never seen a grilled steak that perfectly cooked - looked like a reverse sear. Will be using egg whites on my steak in the future
He's probably a different man when service starts or he has a head chef who is the bad cop.
In all high end restaurants, everyone has a switch we turn on. Especially with him doing 450 a night... That's an insane amount. I used to do that for lunch on a mountain side years ago.

I work for JG and this video made me so happy! He’s exactly like this. What’s so lovely about him is he never stops learning and still works in his restaurants every single day despite his obvious success. Well done!

I had the honour of meeting JG once, back when I still a relative n00b at the chef game. He was so kind and encouraging to a know nothing kid just trying to make his way in the restaurant game. He's been one of my culinary heroes since that day, and seeing this video was just so inspiring.
I'm retired now (I left the chef life in my 40's for my other passion, IT work), but I still remember, and admire JG. I was totally fanboi-ing during the whole video.
I feel like the hallmark of a true master is knowing that there's always more to learn, and actively seeking new knowledge and skills every day.
Gosh he seems so incredible genuine and so eager to mentor and encourage other people! I love that he doesn't seem annoyed or threatened at all and is just happy to cook with other people. You're so lucky to work with him!

@@thog7653 It's very easy to look up what CZcamsrs make for their online content. Josh is easily a millionaire. What do you think is paying for his camera crew (very highly talented) and traveling? I'm not dissing him, but he has no reason to be nervous around a world class chef - he's in the same category himself, obviously.
The mutual respect in this video was heartwarming. Jean George seemed excited to teach Josh and was so encouraging and kind. Josh respected his experience and was appreciative of his time. Not only is this an entertaining video, but a prime example of how people should treat one another.

Its interesting to see Joshua next to another professional chef of this caliber. Its real easy seeing Josh's videos that he's kind of a goof - but the techniques are all like... pro kitchen level and it stands up head to head. Its like seeing finding out your frat buddy is a savant.

Having worked in a few kitchens in my twenties, I think my life would have taken a different path had I worked for someone like Chef Jean-Georges. What an amazing experience this must have been.
JG seems like an incredible person. He's one of the best in his field and to have so much humility and class that's impressive. I definitely will be checking out his restaurant.
i really like chefs who've achieved so much but also take time to give younger cooks their roses :) it really shows their character and love for the craft
I have spend 20 years as a professional chef and the industry can be pretty brutal. It really warms my heart and gives me hope to see this collaboration. This is what is missing today vs. the cooking show beat down competitions out there. Such a pleasure to see two gentlemen Chefs being positive, sharing, and putting out amazing food.

Cooking to me is self expression so its really nice this chef was so caring and heartfelt. In America we are so used to seeing Gordan Ramsey just yell and be just critical this guy seems to foster the passion of younger cooks and inspire and teach in a non condescending way. Truly amazing change of pace.

Yeah for sure! There's a j kenji Lopez alt reddit AMA video where someone asked him about eating with the queen, Bourdain and ramsay - and he said he'd eat ramsay & the queen. He explained that it wasn't just a TV character, ramsay actually believes you have to abuse people to push them far enough. A mutual friend actually had ramsay throw a pot of boiling hot sauce at them.
It definitely seems like ramsay has moved away from the abusiveness, but still believes you have to push people hard. But yeah it's so toxic and unnecessary, we're finally getting past that idea you need to scream at and beat your employees to be successful
Not only did his food look incredible, but I want to go to John George's restaurant even more because he just seems like an absolute class act

Jg was treating the cooking as a collaboration. It was nice to see the respect and interest he showed into your dish. I’m sure both were fantastic, in my eyes Jw would be a fantastic early dinner meal before a night out of dancing and Jg’s meal would be a fantastic finish to the night before heading home. All in all I loved both and it looked like fun even if you were obviously nervous.

Jean-George is such a nice guy. I've seen his video published by Eater quite a few times and it really reflects the mans personality! Such a humble and outgoing chef.
I love watching michelin star chefs cook. Everything just comes so naturally and easily to them. They have such a knowledge of ingredients and flavors and techniques that you just give them a concept or a list of ingredients and they make magic out of it.
Ive cooked for years at home and professionally, and I dont think Ill ever have this level of finesse. Im in awe of it.
Believe in yourself! Dont be afraid to try new things and to mess up. Obviously I am sure there are some more "naturally" talented cooks, but if you spend enough time reading, watching and practicing new techniques and ingredients, improvements will come fast. Maybe you wont be a Michelin Star chef, but having the mentality for learning what truly is good food and why it is good is very crucial.
The industry is super hard and most of the time it is not about quality, but how many customers you can serve. Which can be completely fine if you have the excellence and fines of a world renown chef. I am not amazing at cooking, just ok to be completely honest, however I have seen an amazing improvement in my skills by simply just going and learning. New ingredients, cultures, how the locals use it and possibly (if there is something) how would a more well known chef utilize it.

My gf and I had the pleasure of dining at JG's flagship in NYC last year. Whenever I eat at a "high end" restaurant I can never honestly say it was worth it. At JG's not only was it worth it but they massively raised be bar for me on what a can be done with food. To top it off I got a fist bump from the man himself.

As someone who’s spent a lot of time in kitchens, the funniest thing to me is JG talking about his “onion test.” Cut an onion 4-5 ways, “Wait what are the 5 ways to cut an onion?” “I don’t know.” Hahaha. Julienne, brunoise, dice, mince, batonnet. There you go boys.
