    The way you cook reminds me of my uncle. He died unexpectedly almost 4 months ago and he was so talented in the kitchen, he took pride in what he did and he was a great host. He had many friends who loved him and his cooking. I know this information is unimportant and irrelevant to the video but it reminded me of him and now I really miss him.

    This brings back memories of my dad. I'd ask him what gift he wanted for whatever holiday it was, and his answer was always my potato salad. I like to use half mayo, half sour cream. It makes it taste less heavy.

    Looks great, but I'd probably slice my potato into larger pieces. I also like some chopped up bacon, and a tablespoon of sweet relish. I also garnish the top with slices of egg, lightly dusted in smoked paprika.

    I think publishing a potato salad recipe is like publishing a top 10 best rock and roll songs list. The fun of it is not that everyone will nod and agree, but that everyone will have to put in their 2 cents about what the recipe / list should really contain. Happy potato salad season to you, Chef!

    The classic salads are classic for a reason. Because they are delicious! This is my favorite potato salad. People can keep their bacon, cheese and all that other crap they throw in to "improve" it. I just made classic macaroni salad for the holiday last week. Yum :)

      If you use that do not use the extra salt since pickle rime in mostly salt

    If you don't like hard boiled eggs in your potato salad, I recommend leaving out the potatoes.

    In Indiana, ppl like to add pickles to their potato salad, something my mother (who is from Pennsylvania) finds quite odd. When she first moved here, she took a potato salad to a family gathering with her in laws, and my aunt carried the potato salad to the kitchen and added pickles without asking my mom. When mom asked her why, my aunt said "oh, I just thought you forgot to add them!"

    ...this is honestly my favorite... valid... tato salad. I'm a heathen and like this as a spread on sandwiches with a crisp dill pickle or in lieu of cole slaw on BBQ! Chef John, why do you identify so well with my Southern, culinary impaired childhood? Your recipes are my mom's recipes, if only she used salt and spices! In short, I luv tato.

    I perfer my potatos not quite this done when I make potato salad. I also use the potatoes with red skin and leave the skin on. However I do think the dressing would be awesome. Will try it next time I make potato salad.

    Potato Salad is an interesting food, and one of my favorites in the spring/summer. It's interesting because of all the ways people make it, which are all wrong! haha I kid. My grandma's is simple though: potatoes, eggs, miracle whip or mayo, onion, and season all, salt, and pepper. I love it.

    How about grated sweet onion instead of finely diced? Grated onion is one of the "secret ingredients" in "local style" Hawaiian cooking.

    I may try this at some point, but minus the hard boiled eggs. Eggs only belong in a potato salad in the form of mayonnaise.

    It is easy to think of potatoes, and fortunately for men who have not much money it is easy to think of them with a certain safety. Potatoes are one of the last things to disappear, in times of war, which is probably why they should not be forgotten in times of peace...

    Chef John, thank you sooo much for sharing your potato cooking technique! I love the flavour of my mom's potato salad but, more often than not, I find that the larger chunks of potato are to hard and not thoroughly cooked through. We've got a reunion coming up in a couple of weeks and I'm excited to give this method a try!

    I do the Julia Child method, letting the potatoes soak up a few Tablespoons of chicken stock and Cider Vinegar, everything else is pretty much the same except adding pickles and bacon.

    Use chopped dill pickles instead of the celery and add garlic powder, and do half vinegar and half dill pickle juice.

    You need to visit us on the Instant Pot FB page. We cook our potatoes and eggs at the same time. My mom taught me to add the vinegar to the warm cut potatoes. When cool add everything else plus some sweet pickle relish. Cover and refrigerate overnight. Bliss.

    Looks good! I always add a bunch of ingredients into mine to keep it interesting. Mayo as the primary ingredient of course (if you use light mayo, or (god forbid) yogurt or sour cream you're doing it completely wrong), mustard, a splash of ketchup, Worcestershire sauce, relish, and a sprinkle of hot sauce make up the dressing. Garlic powder, dried parsley, and salt to sprinkle over the hot potatoes, and then that goes right into the dressing still warm to absorb all the flavors. Onion, celery, and boiled eggs are a must, maybe even some crumbled bacon and bell pepper. And it's always best if it gets a little bit smashed up like mashed potatoes.
    ... Damn it now I'm getting hungry.

    For a different dressing for the salad, take sour cream, finely grated cheese (Cheddar or cheddar jack tends to be the best), crumbled bacon, and some green onion (Or dried chives). Works better for those like me who have issues with mustard...

      sweet pickles, pimento and celery seed. what the women in my family always included along with Chef John's basic recipe. Of course they never boiled the potatoes in salt water.

    My perfect potato salad:
    No cayenne (John would hate me for this, but I despise cayenne)
    No celery
    No mustard
    No Eggs
    Add:
    Some sugar to the dressing
    P.S. I'm from NY, and I like the classic NY style potato salad.
