I don't usually comment about the topic of Carbonara, but since you commented on a Filipino account, I'll tell you why we have our own style of Carbonara. Pecorino and Guanciale (even Parmesan Cheese) are NOT widely available here in the Philippines and even if high-end supermarkets have it, it's EXPENSIVE. So, as much as we want to cook the authentic recipe, most people cannot sacrifice at least a third of their weekly food budget just to buy two ingredients. On the other hand, all purpose cream is widely available and significantly cheaper, that's why most people use it as substitute. I hope I was able to shed some light about this and I hope that you be open minded about it also. 😊

As a Filipino born in Italy, i love filipino spaghetti and pineapple on pizza. I think there's nothing wrong about it, the important thing in my opinion is to be specific with the name lol like Filipino style spaghetti, Filipino style pizza etc... Because i think what Italians are bothered about is when they see Carbonara and then the rrcipe uses cream... It's normal to adapt a recipe based on the ingredients we find and on the taste of the locals.

@@maricris. Guanciale is now available on groceries like S&R, Landers and Santis Delicatessen. There's nothing wrong with carbonara the filipino way. What's wrong is some filipinos have the audacity to say "traditional / authentic carbonara" using cream and bacon. Some italians misunderstand it so my suggestion is that filipinos should be careful in labelling their videos. And when some of them get to experience real carbonara, sometimes their reaction is, "its not my type" OR "i dont like it"

That's the beauty of it. Easy to make, just need to be careful on the cheese egg mixture as it might become scrambled eggs in the hot pasta if it's not mixed quick enough.

I just ate Filipino-style carbonara made by my sister. The flavors are so GOOD with the mushrooms and cream and it is my absolute favorite. While I haven't tried Italian-style carbonara, I dont know if it would beat my love for Filipino-style. Maybe it would change my mind, maybe not 😜😆

Nah. Lots of them actually don't change their ingredients even when it's more available and affordable to them when they move/get rich. . In my case I've alwasy hated spaghetti made by other people because sweet. (Except jollibee. i liked jollibee). . .anyways, I cook my pasta the way I want and I never proactively offer it to other people incase they don't want the flavor.
Thats why you call our carbonara as "Filipino version Carbonara". So you wont receive criticisms or angry comments from Italians. You dont make videos in the internet and call it "carbonara". At least have the decency to label, "filipino version carbonara". So just in case any italians or sensitive pasta critics view that video, it wont spark hate or negativity

In absence of guancale. You can substitute it with smoked bacon. As for pecorino romano, the closest substitute is Parmesan.
