Chef Tom makes me want to smoke a brisket again.
Reminds me of the Tex Jack sandwich, that is on a hoagie and has bacon, with coleslaw and pickled peppers on the side.

Chef Tom, of all the BBQ chef's on CZcams, I think you are the man to make something new happen. I would be thrilled to see a video where you use the deboning technique you've demonstrated for birds to get the bones out of a chicken. I'd like to see the largest brisket you can find, where you open it up in the seam enough to insert the boneless chicken, and smoke the whole shebang. It might make the chicken overdone, but then you can serve your guests / coworkers Chicken in a Briskit. Somebody has to do it for the BBQ dad's out there.

As always, the brisket sandwich looks amazing. I would like to see Chef Tom's take on a burger or sandwich with a smoked pimento cheese spread. In the Carolinas where I live pimento cheese is very popular.
That looks incredible. Best of both worlds; brisket and grilled cheese. The next step to take that concept completely over the top; GRILLED QUESO BIRRIA TORTA. Make some brisket point and beef cheek birria, shred it up and put it on some nice, thick sourdough bread. Top the birria with little pickled red onion and a sprinkle of cotija for saltiness. Use queso Chihuahua as your melting cheese. Mix some butter and the retained fat from cooking the brisket & birria to toast the sandwich. Finish it off by dipping the sandwich in a cup the consomé with diced onion and cilantro. If you really want to go over the top, melt a handful of the queso Chihuahua in with the birria fat and put the bread on top of it. Now, instead of just a little cheese skirt, you have a full crust of spicy, crispy cheese.
No words CT, no words except another top of the chart option. I bet that would be very good on a couple slices of marble rye too. Thanks man

Could replace the sweetness of the BBQ dip with horseradish on the bread and Au Jus for dipping. Got damn, i'm stuck in an apartment, but I cant wait to own a smoker and to start eating well!

Like this idea if your going for broke add thin crispy bacon. Still I bet that's a solid 9/10 sandwich. Love it. Well done chef.
It's even better the day after, you just fry the meat in a pan and get it a little crispy then make the melt.
This is my favorite bbq channel. And this is not me trying to bitch, and I assume there is a reason why, but I do miss the longer videos.

Had this years ago at the GMG in Dallas. Yes. It’s good. I’ve made them, SPG Brisket, smoked with Mesquite, Kings Hawaiian Rolls, 3 cheeses, smoked Gouda, Cheddar, PepperJack. sweet Spicy Sauce. Julienned Sweet Onions, Jalapenos, sautéed. Also with Texas Toast. 😋😋😋😋😋

I was bummed when the American cheese went on. Been watching too much Chef Tyler! Would've swapped the bread for some marbled rye too. Either way, that looked like a banger of a sandwich. 😎
