  • Pineapple Upside Down Cake for Two!
    Ingredients For Cake:
    ¼ t. salt
    1 egg
    5 T. Sugar
    5-6 T. Self-Rising Flour
    3 T. Pineapple Juice
    3 T. Oil
    ¼ t. Vanilla Extract
    In bottom of pan:
    Pineapple Rings & Cherries
    Lt. Brown Sugar
    Bake at 300 F. for 33 minutes in mini-oven.

    I was taking a bite of pineapple as I opened YT and saw the thumbnail ! You're right---nothing worse than a dry cake, except maybe rubbery 😝 cake. Yours looks yummy and just the right size for two nice servings of dessert. These days I look specifically for canned pineapple in juice, the light syrup kind is way too sugary.

      And they aren’t watching and listening to us🧐😎…I’ve always mixed brown sugar and butter in the bottom of the pan with the pineapple and cherries or pecans and caramelized it first then pour the batter in and cook it. The turbo oven is great for this recipe. Great idea!👍 My Gma always cooked hers in an iron skillet.

      A restaurant near my old work offered them on their salad bar. Cut into small cubes, quite firm, and spicy sweet - tart, they had a complex flavor reminiscent of Major Grey's chutney.

      In my teens, back at the very dawn of time itself, a lady gave our family some watermelon rind pickles. Still the best pickles of any kind that I've EVER had. Sweet, with a LOT of cloves. So delicious....

    We so love your videos for 1 or 2. Thank you for sharing this recipe- I’m so eager to make it. Have you tried pineapple upside biscuits? They’re heavenly. Just add a bit of brown sugar to your usual biscuits and do your butter, pineapple, cherries, and brown sugar just as you did for your cake but in a muffin tin. Put your biscuit dough on top and bake. (I use the silicone muffin cups when it’s just the two of us.) And these go great with fried ham. God bless!

    With the leftover pineapple rings you can make a mayonnaise and pineapple sandwich with white bread of course. They are delish!

    What brand vanilla? I can’t find a good brand. Seems my frosting tastes like dish soap. I really rinse my bowl good.

      My vanilla extract is from Mexico. You'll have to look in your area to find a good "real" vanilla extract.

      You can also check Amazon. Real Vanilla extract is quite pricey regardless of where it’s purchased, but worth it in my opinion. Take care.
