When I worked at KFC in the early 90s, it was Powdered milk. And they're not left to sit in any mix, just dipped in plain old water. I do know powdered sugar is in the spice mix though and a hell of a lot more pepper is used. For the amount made in this video it'd be more 4 tablespoons pepper and 3-4 tablespoons of MSG and 3-4 tablespoons salt. I took a bag of the spice mix home once and is most certainly Majoram, Oregano and Thyme in it. Real secret is in the pressure cooker though. It's as simple as that really. Oh... and we cooked in fat+oil mix not straight oil. It might have even been shortening, cant remember.

Cook on medium to high, so, not too high. But, make sure to cover while cooking, this makes it fry/steam, that way, it will cook through and make your chicken tender. That's the trick i use.
