For a recipe for wings like in KFC you need:
Chicken wings - 600-800 gr (for a serving for two)
For the marinade:
Water - 200 ml
Olive oil - 2 tablespoons
Dried, ground ginger - 2 tablespoons
Red pepper - 2 tablespoons
Black pepper - 1 teaspoon
Salt - 1 teaspoon
Dried, ground hot chili pepper - 1-2 teaspoons
For breading:
Wheat flour - 500 gr
Dried, ground paprika - 2 tablespoons
Salt - 1 tablespoon
Dried, ground hot chili pepper - to taste
For cooking:
Vegetable oil - 1-1.5 liters

I worked and managed a few KFC in Texas and California yes Ralph Moreland cared about those ingredients and the secret ingredients were prepackaged before our stores got them, we seasoned the flour but ingredients were not a part of the label. Today KFC has so changed and.doesn't taste as it did then. But this chicken is good. I'm 80 years now and Working with KFC for 20+ years was an honor.

I made this and instead of paprika, I used Asian chilli powder. I also grounded garlic and ginger as I didn't have the powder. It came out absolutely delicious, my family concluded that it tastes better than KFC.

I take the dry ingredients and place them in a large zip lock bag, then stuff the wings into the bag and shake it up. Less handling this way....works great when having a fish fry also...cube the fish into 1 1\2 inch pieces and drop into dry ingredients and shake, drop into wet mixture then hot oil, Viola....

placing them on napkins to drain will create hot spots of non crispy spots on the wings. use a rack over papers trowel. It may take a while longer but it's worth it.
