This kind of Tea, I first had when I had accompanied my kid for her entrance exams in Mumbai. My Friend took me to a Irani Bun Paav Tea Shop and WOW ... what a Tea .. since then, I have been looking at how to make this tea ... Since I had stayed in Abu Dhabi ... had no access to this tea over there ... but finally at home I was able to make this tea .... Really tough process ... daily no one can do that since it takes long amount of time ... but what we had there is Evaporated Milk (without Sugar) which I used ... only thing I had to make the Black Tea ... I would infuse it with various flavours like Rose, Cardamom, Safron etc ... to make it more tasty ... for me the best TEA in the WORLD

Samin Javanmardi Yh can be confusing here Irani refers to the Iranian Zoroastrians that had fled to India during the Arab invasion and later after the revolution. So their food and drink is a blend now of both iranian and Indian

I don't really know exact reason but back then I heard it from my grandma that the Nizams of hyderabad had their unique taste and preferences they always experiment on the foods. Most of the nizams have Irani 's and afghan people as their cheif cook, so I think one experiment is this tea and the same goes to hyderabadi Dum biryani and Osmania biscuits. Though the process seems to be hectic but it is loved by all hyderbadi's. Any one who visits hyderabad they should taste it and you will know it. And also its price is cheap.

agreed this is not the way Irani's make tea ... but the IRANIANS who had settled in INDIA long back ... called as PARSIS in INDIA are responsible for this variation of tea ... In India tea is always made like this more or less ... with milk ... but what the PARSIS did is to make this variation where they make a concoction of tea that is boiled for a long time and also reduced with other herbs plus mix it with MILK that is evaporated ... ie. remove the Water content to the max to reduce Milk ... it becomes more thick ... and then when these two are mixed what we get is a delight to the taste buds ... Since this variation was first made by them ... it is called IRANI chai ... it has nothing to do with IRAN though ...

Can the chai decoction be made and stored coz that is way is taking maximum time to make... If we can store it just heating the milk and condensed milk and adding it to the docoction is all u need to do...
