Pineapple Pie (and tarts) - Tutorial

  • Pineapple Pie Recipe
    Ingredients: Base
    3 cups of self-raising flour
    4 eggs
    300 grams of butter
    1 cup of sugar
    Ingredients: Filling
    4 cups of milk
    1 cup of sugar
    4 cans of crushed pineapple (425g)
    3/4 of the packet of Edmonds custard
    200 grams of cream
    1 teaspoon of vanilla essence
    Method: Base
    1. Start with the base. Mix all ingredients together in a bowl, then knead and press down into the baking (or muffin) tin.
    2. Blind bake at 180 degrees Celsius, until golden brown. Leave aside to cool.
    Method: Filling
    1. In a pot, put milk, sugar, vanilla & custard together.
    2. Mix until custard has dissolved, then put on medium heat.
    3. Add cans of pineapple & keep stirring until thickened, and then add cream.
    4. Once at the thickened consistency, take off heat & then pour into base. Leave to cool.
    5. Whip some cream for the topping & sprinkle with choc shavings (or whatever your preference).
    6. Alternatively, if you want a meringue topping: Beat egg whites with a little sugar, top and and bake until brown.

    Thank You for sharing Your secret family recipes. My sister in law never liked to share her Tongan recipes and that was over 30 yrs ago. It seem to be a big thing back then who made the best pineapple pie, donuts, poke, etc. I was a new mum starting out and her children were all grown, but it's exactly what your children said secret family recipes and it wasn't like i was going into business, i just wanted to cook nice things for my family, but i had 2 best Samoan mates and wow they could cook and were happy to show me how to cook Samoan foods, yum.
    I'm going to try Your Mums dish first and i'm so glad she had You, Sharing is caring and knowledge was meant to be shared and i'm so grateful for tutorials on line. Thanks Ane's Bakehouse.

    I tried this yesterday and it came out really well. I've tried so many recipes over the years and pretty much gave up trying to make pineapple pie because it seemed like too much work and I would always mess up one of the components. Base, Filling, Topping. you simplified the recipe which means easier to make which means make more often. the base, using SR flour and the 3 ratio makes it easier and not going up the side of the pan with the base makes it easier. the filling is a custard with pineapple so easy (i might try some lemon zest in the filling) the meringue came out quite well , first time for me. (might try desiccated coconut in the meringue ). the only problem is I've eaten way too much pie last night for dessert and this morning for breakfast....lol I like how you explain your recipes, thankyou for the videos.

      Awe I'm so glad you enjoyed the pineapple pie recipe. Yes definitely try the lemon meringue with the coconut. I had a slice of that pie when I was in American Samoa and it was delish
