I think what you have are white *pigeons* - I mean, people call them 'doves' anyway because they're white (the distinction between pigeon and dove is very hazy in the first place), but genetically they're a lot more similar to what we normally call 'pigeons', like the wild one in this vid. Just wanted to point this out, since it's very different from a laughing dove or diamond dove, which are smaller, have a different call, and don't have the homing instinct that most 'pigeons' have (so releasing them far from home is a big no-no, which some people sadly do anyway out of ignorance or carelessness). In any case, cute video. :)
Their natural colour is grey, when they breed them white it's like dressing a soldier in white. With a fantail it would never be able to fly faster than a corvid or bird of prey. They need training to know their area so they don't get lost. Most animals don't know how to feed and defend themselves unless taught by their parents.
The "wild one" as you call it, is a rock dove, as are all feral pigeons. They were domesticated thousands of years ago and now all the different colours and shapes of feral pigeons (including the white pigeons here) are descended from those rock doves. Non feral pigeon rock doves live on cliffs by the sea, but they're still the same species as the birds in this cute video.
Doves and pigeons, while related being part of the columbidae family, are not the same. One way to tell them apart is the difference in beaks. Doves have a narrower, longer and more slender beak than pigeons and pigeons have some sort of white membrane right above their beaks in front of their head while doves don’t have this. Doves also tend to appear slightly smaller in size, and pigeons generally have slightly thicker necks. Doves and pigeons also make different vocal sounds as well as flying sounds.
Sounds very odd because all birds have to have preening as a high priority in order to control temperature, water proofing and pests. Pigeons don't like to be dirty, it's like saying they like to be eaten alive by horseflies,they are paranoid about it. They start to clean themselves instinctively as soon as they get their adult feathers. Even street pigeons in a very poor state of health start to take care of their feathers within minutes of being cared for. Accommodation may be too small or it could be ill. Feeding bread gives them diarrhoea. Bathing should be available all the time but not forced. If they have a damaged muscle they may not be able to balance to preen. Some may not want to have a bath but it shouldn't be dirty, that is 100pct red flag for something.
I noticed that these birds have an inverted V tail. This was the sure way to tell they were Laughers (Thai). Are these Laughers? I had Laughers in the 60s and 70s. They are beautiful in any case.

I think a dove is a pigeon, but not vice versa. Kinda like a square is a rectangle, but a rectangle is not a square.
