African Cake recipe (Pound Cake) - Chef Lola's Kitchen

- Here is my recipe for the Nigerian Cake (Pound Cake)
Ingredients
4 Cups of all purpose flour
10 Eggs
4 sticks of Butter (2 cups of Butter)
1 Tbs of Vanilla extract
2 cups of Sugar
1 Tbs Baking powder
1/2 Teaspoon Nutmeg
1/2 cup of Milk (or dissolve 4 Tbs of powdered Milk in 1/2 cup of Water)
Notes:
I know many of you will wonder (especially my 9ja folks ) why I creamed my butter and Sugar for just 5 minutes. You seriously don't need to over cream the mixture otherwise the resulting batter will be too dense and you might be seeing some gluey steaks inside the cake and we know that happens to most of us.
If you are using the hand held mixer then your creaming time will be around 5 to 10 minutes on a medium speed.
Here are some other important things to note:
Be careful of over beating the bater after the dry ingredients have been added especially when using the kitchenaid mixer. If you don't trust your mixer then it's better to gently fold the Flour into the cream with a spatula.
Try not to open the oven until the cake is about done (about 80% done) because this drops the temperature of the Oven and it will affect the rising of your Cake
Make sure you pop the bater in the oven immediately you pour it in the Pan or else the air created in the batter will escape and the cake might not rise well in the Oven
If you decide to make half of this recipe or split into 2 baking pans then your baking time will be about 45 minutes to 1 Hour

+MissLuch Glow You are welcome dear. Actually a perfect fluffy texture can be achieved manually. A hand held blender might give you a close result but the jar blender will not give you the desired texture at all.

+Nautical David Yes this cake is a big one but you can divide the recipe into two and in that case you will use 5 eggs. You can check the description box for more info. about that.

Lola I have tried this cake using single recipe and it has always turned out very good. Today decided to do the full recipe and accidentally water poured in the pudding when I was almost done mixing. Didn't discard it. Let see how it will turn out with water. Lol

Afropotluck actually turned out well. Not the very perfect one but it is edible.

I have wilton's bake pans so my batter went into three pans
I gave one to a friend I and my husband tried one and we couldn't stop, it melts well in the mouth, Oh and it's not too sweet. i was super proud of myself
My in-laws are here and they've been eating it and pinching it so it doesn't finish before they leave...of which I don't mind baking more for them to take back to Georgia

+Becky Ayebor Here are some likely things you can check for:
Make sure you don't over mix the batter once the flour is added
Make sure the Butter and sugar are well creamed together
make sure the Cake doesn't stay too long in the Oven
If possible distribute the cake batter into smaller pans and bake for less minutes

what can I use to preserve fondant cake
If you mean fondant icing, then you don't need to add any preservative and you can just wrap it tightly with a plastic wrap and keep it in an air tight container. This will last for up to 2 months. On the other hand, a cake iced with fondant can be stored at room temperature for 3 to 4 days - this applies to plain cakes without any fruit filling.
