How to harvest beer yeast for homebrewing

  • Beer-yeast harvesting is a great way to save brewers some money.
    My favorite gear to use:

    When:
    It's best to harvest from lower ABV beers ( less than 6% ABV) near the last half of fermentation (around day 3-5 and before dry hopping).
    Storage:
    Re-pitch in fresh wort as soon as possible. You can temporarily keep it in the fridge for 1-2 weeks with the lid on but not air-tight.
    How much:
    I find about 6-10 fl oz (175-300 mL) of yeast slurry to be a good volume for 5 gallons (20L) of wort. The best practice is to examine the yeast under a 400x microscope with a hemocytometer to approximate the density, vitality, and viability of the yeast and shoot for 1-2 million cells per mL per degree Plato.

    I've actually had no problems storing harvested yeast for over 6 months!

      Long-term stored yeast will still ferment, but the quality of the fermentation will be pretty poor. After about 1-2 weeks, harvested yeast significantly degrades.
