- Francisco Gómez is back on his quest to discover everything there is to know about tacos in Mexico. On this episode, he's exploring Quiroga in Michoacán, the carnitas capital of the world. Braising carnitas (literally, "little meats") is the juicy, tasty way to prepare pork by slow-cooking it in its own fat.
The final result is pink on the inside and perfectly caramelized on the outside. Gómez visits the Ayala family who have been cooking and selling carnitas tacos in Quiroga for five generations. Also, watch to the end to find out about charanda, a rum-like spirit that pairs with carnitas perfectly.

As a Chicano born and raised in California, this show has helped me understand a lot of the cultural nuances within the Mexican states and regions. My family is from Michoacán and I can totally hear my family’s accent in this video when the locals speak. They don’t really teach us these things growing up in the states but I’m happy im beginning to understand them. Best show ever.
P.s. Now I understand my tio’s fascination with carnitas.

My parents are immigrants from Mexico but I was born in Central California. I consider myself Chicano because when I go to Mexico, I’m not fully accepted as an “authentic” Mexican because I was born in the US. Now, in the US im considered a minority and Mexican American, not just American.
While I’m extremely proud of my heritage and culture, I exist in an “in-between” of sorts between American and Mexican culture, hence the term, “Chicano”.

I was born in the US to Mexican parents too but I’ve been raised in Mexico my entire so I don’t even consider myself American at all, it’s just the place where I was born
I’ve been to Quiroga and he’s not lying some of the best carnitas I’ve ever had, I went on a food tour there and they told us they feed their pigs only avocados so the meat is so soft.

Michoacán is such a special place. Every city/town in the state specializes in some sort of activity. This was done so that Spanish conquistadors couldn’t destroy a town because then they would destroy a specialization. No other village knew how to do another village’s specialization. That’s why when you go to Michoacán, every town is called “Pueblo de las...enter specialization”. Pueblo de las guitaras, Pueblo de las paletas, Pueblo de las carnitas, Pueblo de queso (cotija), etc. Beautiful state.

It’s definitely more natural but with that also comes downsides. While you know what you’re eating you also don’t know what you’re eating in a different sense. Bacteria and Viruses that are eliminated in the butchering process in other countries can remain in home cooked or natural butchering. Even boiling or cooking meat can sometimes result in bacteria or viruses remaining in or on the meat.
Edit: This isn’t to say that America doesn’t have its own issues only that there are positives and negatives to both ways of producing and distributing meat.

This reminds me of my friends girlfriends mom. She runs this small side business catering food for quinces and such and one day I went with my friend to her house to help fix her car and after we were done her mom served us some posole and it was honestly the best I've ever eaten. It tasted amazing, filled you up and made you feel great and the meat just melted in your mouth. Man I was in heaven, eating as much as I could, I didn't even really know her mom but I asked if I could take some home with me and she gave me this big old bowl of it and I ate that for the next couple days while fighting off my friend because he wanted some too

I agree these were the best carnitas I’ve ever had. I ate from a few different puestos and they were all incredible. I thank my dad for taking us here. It was an unforgettable experience. It’s not too far from where my parents are from, Morelia, Michoacán!

The carnitas depicted remind of a carnitas truck in LA, called Carnitas El Momo where they fry the pig in that vat of liquid. If they do a taco crawl in LA that is a must have. Just Google for the place.
