    3 tbsp. unsalted butter, softened
    1/2 tsp. kosher salt
    1/2 tsp. Ground black pepper
    For Caramelized Apples:
    4 Granny Smith apples
    4 oz. butter
    1 oz. apple brandy
    4 oz. brown sugar
    1 clove
    1 cinnamon stick
    1-star anise
    For Braised Cabbage:
    ½ head red cabbage
    ½ red onion
    2 oz. apple cider vinegar
    4 oz. red wine
    1 tsp. mustard seeds
    1 tsp. caraway seeds
    1 tbsp. avocado oil
    Directions:
