    Ingredients:
    1 1/2 lbs white mushrooms (700 grams)
    4 cups white vinegar (960 ml)
    1 full tsp salt
    1 lemon
    Olive oil to fill the jars
    4 or more cloves of garlic sliced
    1 tbsp dried oregano
    2/3 dried chili peppers (optional)
    Directions:
    Step#1-Wipe your mushrooms with a wet paper towel to remove any soil or quickly rinse them. Do not have them sit in water.
    Step#2-Bring the vinegar, juice of lemon, and salt to a boil, add your mushrooms.
    Step#3-Cook for about 2/3 until tender not too soft as they need to still have a bit of a bite.
    Step#4-Dry and cool on a paper towel or clean kitchen towel.
    Step#5-Wash and boil your glass jar for at least 5 minutes. Dry and set aside.
    Step#6-Once mushrooms and jars are cooled add your mushrooms, garlic, oregano, and peppers.
    Step#7-Mix and add your oil and make sure they’re submerged in the oil.
    Step#8-Seal the jar and store in your refrigerator.
    Step#9-When you eat the mushrooms make sure you add more oil to the top.

    This recipe is fantastic. Absolutely love it. I tried it with the mushrooms in the recipe and Beech mushrooms mixed together and they were amazing. The Beech mushrooms make it easy to eat on a cracker as an appetizer. Thank you for sharing!

      Did you use 2 cups of vinegar and 2 cups of water? You had 2 cups of liquid on the table. Then you mentioned water and vinegar mixture. But water is not listed in your ingredients. Thank you for your assistance.

    Hi, try this:: boil mushrooms then drain the water and add sliced onion ,little bit of vinegar and olive oil. Also dill can be added. Great appetiser for vodka 😀

    What kind of white vinegar do you use? I love marinated mushrooms, but I have never made them before and I’m looking forward to making them❤️

      Thank you for watching. I use any store brand 5% acidity white vinegar. Let them sit a few days before eating and always top off with more oil. Keep refrigerated. 💕

      Hi Rachel,
      Thank you for watching. It’s 4 cups of vinegar. If you like your mushrooms less pickled you can do 3 cups vinegar one of water.
      I like it nest in full vinegar.
      Yes it’s the same process for the artichokes. Just cook them a bit longer. Try to get the baby artichokes.

    QUESTION: Do you need to let them set for days? Months? Years (as in some cultures) and can I use the vinegar water for other recipes (marinade) instead of throwing it out? Thanks for posting. Greetings from The Netherlands. 🌹

      So wonderful that you watch me from the Netherlands. Been there and loved it.
      I let them sit for a week before consuming. Always make sure that you top it off with more oil as you eat them. My nonna would keep them outside the refrigerator for the winter season but I refrigerate them and use them within 2 months.
      Once I make a big batch I discard the vinegar. Hope this helps. Sending you lots of love from New Jersey 💖

      Wait a few days to a week so they absorb flavor. Sometimes I eat them immediately lol always top off with more oil so they’re completely submerged. They keep a few weeks to even a month. If you see the oil bubbling discard. Enjoy and thank you for watching 💕

    Besides white vinegar is it worth trying this with any other vinegars like apple or rice?

      Thank you! I think apple cider vinegar might be great. You need to try a batch and see the ratio of vinegar and water. Let me how how it works.

    I really enjoyed seeing this video... I maybe missed if you said how long they can keep like that. I will watch it again... I want to make some of those for sure very soon. I really wish I wasn't allergic to garlic, but members of my family can eat this with the garlic in it.

    That is so simple. I almost bought bottles of pickled mushrooms but I couldn't understand how expensive they were. $28. dollars for two bottles.

      @@maxbattersby9164 store them in the refrigerator and they keep 2 months. If ever you see any bubbles in the oil you’ll need to discard them. That’s an indication that they’ve gone bad.

    I made these and also the eggplant. Insanely good - but I just read that garlic submerged in olive oil has really high botulism risk after 3 days. Now im really worried. Anyone have thoughts on this? Im really sad but also want to just eat!!! Allesandra talk to me here!

      Robby my grandmother would make bushels of eggplant and kept them in a cool dark pantry for months. To be safe always make sure they’re submerged in the oil.
      Always use a clean fork when serving from jar. Top with oil and store in the refrigerator. Eat them within 10 days and you should be fine.
      I too freak out when I read about botulism.

    In the ingredient list and in the video you don't say anything about adding water to the vinegar and lemon mixture... But later in the video you say vinegar and water... I hope I didn't need to put water with the vinegar.. Anyway they look good!! so fingers crossed!
