I don't really see how limiting the peace deal helps with the ironclad plan, if anything taking more now would boost it. While it is true that they have a massive naval cap, Hungary and the ottomans are both great powers despite their middling industry, a strong naval buildup during war would be difficult. As for allies, given some hints we got of prior European relations, the DM, and Elba both seem most inclined to help, though you may have to surrender more Italian states to secure DM support.
I can understand the peace deal, because it encourages the Ottomans and Hungary to just let it be and end the war. After all, it's just the islands, who really cares? If he pushed his luck and tried to get more, it's possible the Ottomans could've stayed in for the long run, and Aragon may not have been so lucky (Japanese invasion of Iberia?)
In regards to Europe, Id think the 3 main choices of allies would be either DM, Elbian, or Russia, but each has their benefits and drawbacks. Elbians is the most straight-forward, because he is your spear lord, but if Elbian does something, than most assuredly Burgundy or Russia will do something to counter, and now its a 3 or 4 vs 2 with your main ally being attacked on 2 fronts and no real way to assist their armies DM would be good, he did in fact help fund your war, and you'd be able to link up armies and navies relatively easily. Downsides being that Burgundy will get involved, and its an unsure thing that DM will get involved, esp because from what I heard in game DM is being a bit of a semen slurper and hugboxes galore n shit. Russia would be good because it opens up fronts on the Hungarian and Ottoman side which would increase their micro needs and make it a 3 front war. Downsides might be that Russia's impact is more or less dependant on Russia's skill level and how he is doing techwise. Elbians might also have some issues with it, but considering its empowering his spearling and weakening another major rival on the border, they might not give much of a shit. For the Americas, its a toss up on who is winning there, and what you could give them for them to give a shit. The extra naval dominance from any of them would certainly help, though.

The Dual Monarchy has Italian land so they might be a bit worried about you trying to return to Italy possibly looking to take all of Italy for yourself and Elbia probably doesn't have much interest pushing into Hungary. If Russia has interests in land held by Hungary and the Ottomans, that's my guess. You seemed to hint at the Ameriga, but unless they're packing some serious firepower, I don't see how that helps you get into Italy.

White peacing with no war goal doesn't give a truce. Some rulesets don't allow nations to be called in again after peacing, this one doesn't. Adding a wargoal (or having one added on you), will add a truce, even if it isn't taken. I do think that calling Spain multiple times starts to become exploit tier.
