- On my last evening in Assam, I got to taste some of the streetfood options in Guwahati by the lake. This street food is very different from the typical street food experience I am used to in South Asia. This place was full of the young generation and fast food options targeted for students. As a result, I had a wonderful time as some of my followers recognized me, and they did not even let me pay as part of real Indian hospitality.

The stark difference you can see here is it's more hyginic compare to rest of India. No one is putting their whole hand inside food, the streets are clean and not filled with trash, and foods are well protected from flies and insects. Also people are much friendly and has no intention of scamming you as a foreigner. I would suggest you to explore more North-Eastern state.

4:12 that’s actually a kind of hat called ‘Jaapi’. It is actually used by farmers in paddy fields when they work there. This is the fancy type of jaapi, using for showcasing. Jaapi is also use for giving someone as a gift, token of respect. Love from Assam. Hope you enjoyed your stay in our Assam and will visit soon another parts of Assam state.

Basically in Assamese tradition there is no concept of street foods culture. The vendors you see are mostly brought from other ethenic cultural people migrated to North East from various parts of the country. We Assamese,Bodo and various tribes mostly have sweets and deserts and meats that also supose to be eaten during festival seasons in old times. Time changed so the foods and people got modernised and eating habits and choices.
Please never pay to any beggar more than 5 rupees or you can offer some food in spite of money.

4:08 those are traditional Assamese hat called Jaapi. It's originally used by farmers in field, but the designer ones are used to greet guest or as a decoration piece.
We the people of ODISHA we called it jhampi in ODIA language
Jaapi or Japi is a traditional conical hat from Assam, India similar to other Asian conical hats. It is made from tightly woven bamboo and/or cane and tokou paat (Trachycarpus martianus) a large, palm leaf. The word jaapi derives from jaap meaning a bundle of tokou leaves. In the past, plain jaapis were used by ordinary people in Assam and by farmers for protection from the sun, while ornate decorative jaapis were worn as a status symbol by the royalty and nobility. Decorative sorudoi jaapi are made with intricate cloth designs (primarily red, white, green, blue, and black) that are integrated into the weaving.

Guwahati is like cosmopolitan, if you want to see real assamese culture & cusine you have to visit the nearby tribal villages...NE is hub of more than 100's of tribes & have their own ethenic beliefs & food habits , tradition...its comletely different from rest of India & quite similar to southeast asian countries... The landscape is also similar to Thailand, vietnam or cambodia... Some high altitude places are like tibetan regions...

4:02 thats not a Mexican hat... In Assam, agriculturally engaged people while ploughing the land uses this hat to save themselves from heat or light even sometimes from rain.... This hat is called 'Japi' in Assamese.

Steam momos are more popular than fried momos..there are two places where you will get best momos in Guwahati, one name is "Momo Ghar" (it is situated near where you are) and another is "Momo Hut" (it is in Wireless area of Guwahati).
