      Yeah dear, iromba and singju is a kinda dish of food which we the manipuri can't skip btw what I love about Meghalaya khasi traditional food is jadoh.

    My mother used to always opt for hendak instead of ngari as she said hendak is healthier. Whenever we get viral flu, she would let us eat hendak for ngari. But since she passed away in 2013, I have not had hendak as it's too cumbersome to make it.
    Having said that, our way of eating hendak is very different. We never used hendak in oil fried vegetables.

    Seems more advanced than other north eastern foods must be of meitei community, nagas, arunakhalis, mizos, they relly have to work hard on their food habits, the best is Assamese, Tripuris, khasis, Indian Neplese (Gorkhas)

      The onion is neither burnt nor over cooked, it is called caramelisation, this process is extensively used in cooking to give a sweet and nutty flavour. Hope this helps. X
