Slice Of Life: Easy Taco Casserole

- Hi guys. Today was a super busy day and I needed a quick and easy dinner. So...I made Taco Casserole. :)
Taco Casserole
1 pound ground beef
1/2 tablespoon butter
1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 packet taco seasoning
3/4 cup water
14.5 ounce can diced tomatoes, undrained
14.5 ounce can of rotel
1 1/4 cups corn chips
16 ounce can refried bean
15 ounce can kidney beans
2 cups of cheese
Brown ground beef with onion and peppers. Stir in taco mix, water and diced tomatoes, do not drain.
Set aside. Stir together refried beans, rotel and kidney beans.
in a 9x13 baking dish, start by crush corn chips in the bottom to create a crust layer. Next, add the bean. Next add the meat. Next add the cheese. Bake at 375 for 15 minutes. Garnish with lettuce, tomatoes, black olives and green onion. Enjoy :)

My grandchildren love tacos, but this sounds really good for a potluck dinner and so easy. Thank you! I'm going to make it for our family reunion, and I'll let you know what I think. I'm almost sure they will be asking for more of this the next time we have a gathering. I will let you know how the family liked it.
I made my verizon of this cassero;e. I used chili cheese fritos. Green onions, sliced olives, black beans, diced tomatoes and taco seasoning along with cream of chicken soup. I learned 60 years ago to stop layering this type of casserole. Just Mix everthing togeter and put in the casserole pan

HI Mindy. Thanks for sharing. Looks good. My family won't do the beans, but I see them really liking a slightly modified version of this dish. Great job.
We called it mexican casserole in my family. And it was and still is my favorite dish ever. Since everybody seemed to take this recipe to their grave. I watched your video and a few others to inspire me. Just finished day 3 of eating this for dinner. So thank you. I did add a few items different. Main one would be a layer of sour cream/cottage cheese (equal parts. And the old school regular fat stuff). The low and non-fat just turns to water. This layer on top of meat & beans. Then May I suggest Monterey Jack (at least mixed with cheddar) on top. Anyways, thank you for your video.
Love the casserole idea, but equally as much, I loved the speed with which you presented how you make the casserole. So nice not to have to watch you dice everything etc.

Looks delicious! I was going to buy ground beef at Aldi yesterday to make some taco meat, but they had chopped and seasoned taco steak for the same price so I ended up getting that instead to use for some tacos/quesadillas/rice bowls this week.

You can't overdue cheese at all there is never enough cheese.
If I ever try this will have to tweet the ground beef with soya bits and the cheese with the veggi brand, but im trying to say away from to much cheese cause it not so healthy but other than that the food look great.

Can I leave the beans out and put peppers and mushrooms in instead ? I don’t like the texture of beans 🤮(except Heinz baked beans 😝) I can’t imagine a world without cheese either 🤗
I think you could play around with it and make it however you’d like. Maybe less liquid in the meat mixture so it isn’t runny.
Chris doesn’t care for beans either but...they are good for him 😂🤣 I’m like the mother hen nudging him to eat the beans!
