- This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

INGREDIENTS
- 2 lb beef
- 1 yellow onion
- 1 1/2 tsp salt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 3/4 tsp garlic powder
- 1 28-oz can diced tomatoes
- 1 tbsp flour
- 12 corn tortillas
- 2 cups shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add 1/2 cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

From my farm to your home. 🏡
My name is Kaleb Wyse and here, you will find delicious recipes, videos from my farm, garden, and fun home projects. My knowledge has been earned from years of home cooks and farmers in my family. wyseguide.com
A farm is much more than a house to live in; it’s a lifestyle. My passion for gardening and landscaping came from outdoor work with my mom in our expansive farm yard, my love for baking came from innumerable short walks to my grandma’s house to make cookies, and as a farmer, my dad taught me that we are the stewards of our land.
So whether you live in a city center or have decided rural life is for you, I hope to inspire you with the projects and recipes I use in daily life. We can’t all live on a farm, but we all need farms in our lives. From the dirt in my vegetable garden to the flour in my kitchen, I’ll show you everything I love to do. - Jak na to + styl
Growing up in Michigan in the 70s and 80s we ate a lot of casseroles. Later, when I was raising my kids I cooked a lot of casseroles. It was a quick, inexpensive, filling, comforting, and delicious way to feed a family. Don’t get me wrong, I cooked a lot of other dinners besides just casseroles. But, funny enough, now that my kids are all grown up they always ask me to make their favorite casserole when they come to visit. It’s funny how casseroles get such a bad rap. Thanks for sharing this recipe! Brings back good memories.
Same here in the 70s and 80s but in Illinois. Class of 82. A casserole is comforting and fun. Everything is right there in one slice.
That's such an awesome memory. You passed on a tradition and tons of love.
Michigan girl from 60s and 70s! My Italian Mom made plenty of delicious casseroles. But Taco was not one of them. I picked up that knowledge when in lived in Dallas and I ended up being a single, working Mom. My daughter LOVED this. Me too!
Now I am back in Michigan and I am cooking this today for my new family: my best friend and her husband. We are all old and sick now so this is easy and good!
I love how Wyse is so enthusiastic about making his meals. He builds you up and makes a person happy to cook.
I made this tonight with the addition of black beans, corn and jalapenos. It was easy to make and I served it with lettuce, avocados and sour cream. Thank you, Kaleb, for sharing this recipe, I really enjoyed the taco casserole!
I do the same casserole (since the 80's). I do add, sour cream, salsa, and refried beans to the layering. My kids (now adults) loved this, there was never any leftovers!
That sounds delicious 😋
I made this last night. It is FABULOUS! I used flour tortillas rather than corn. I have an electric stove and put the tortillas on the glass burner and they crisped up just fine. Served it over thinly sliced lettuce, with guacomole, fresh hot peppers, fresh onions, fresh tomatoes. It couldn't have been better. Everybody loved it. Thank you.
I live in Oregon, but I from northern Illinois farm land. These recipes bring back memories. 👍🥰
Great teacher, beautiful kitchen, beautiful view of the garden from your kitchen window. I love that stove!
Love your recipes and have cooked several. Always delicious. “Food is doable”, what a great tagline for these segments.
I love how you embrace our Iowa and Midwest roots, foods, traditions and lingo. Every video you share your love of Iowa. As I have travelled around the country, so many people think Iowa is only pigs, corn and farmers...not that I'm complaining about any of those. You are a wonderful unofficial ( although I think should be official) Iowa ambassador. Every recipe I've tried has been a hit.
That isn't just Iowa, that's also indiana and ohio
Yes! I actually have all the ingredients to make this. Thank you so much for sharing 😀
Made this today on a very snowy Michigan winter afternoon. Really really good. Thanks for the fun idea for dinner.
Yum! In WI you need a good casserole in the winter 🥶
Can’t wait to try it!
Thank you! Made this last night. Served on top of lettuce, with fresh tomato slices next to, hot sauce & Greek yogart on top.
Enjoyed...only used 1lbs of beef, added full chopped red pepper, onion, can diced tomatoes to beef.
Colorful & tasty.
I love your kitchen! Thank you for your videos! I’m a fan!

I love watching your recipes . Am definitely going to make this casserole. You have a great warm personality. Am so happy I found this channel. Faye
Love your easy recipes, and I grow my herbs and dry them so no waste, love the dried herbs
Thank you for telling people to warm up their tortillas. It really is important. Even if you don’t have gas you can use a skillet to warm them up and give them a touch of color which = flavor.
Made this last night. My family loved it. So good and easy. I used ground turkey. Definitely being added to meal rotation. Thank you!
I love the way you explain the way you cook and you make us feel like it's ok to make mistakes and I love kip
Instead of thickening the burger mixture with flour, try masa or cornmeal. They do that with chili in Texas.
Keepthose recipes coming.....they're awesome!!!

Made this tonight it was Excellent. I did add a layer of spinach. PERFECT! Thanks for sharing this
Tell us more of these things called
“ Haystacks “……
My mom made Stack-A-Dinner-browned ground beef on top of mashed potatoes and topped with peas. It was so fancy to us as kids.
Instead of using flour to thicken the sauce you could corn tortilla flour for more of an authentic flavor adding addition. You could also add roasted poblano peppers. One more thing you could warm up or lightly toast your dry spices prior to adding them. All pro moves to make a more authentic dish and elevate this American version of Mexican food.
I love roasted poblano peppers! That's a great idea. And maybe a bit of chipotle?
I’m going to try this out! Thank you!!!
I just love your vibe ❤
Thanks for this video, cooking it tonight ♥️♥️♥️
You just made a cheesy, beefy Mexican Enchilada. Casserole style. Mmm mm mm!! This looks so good. I’m totally trying this tomorrow. I too add the lettuce, salsa and peppers. Mmmm. But sometimes I like sour cream. Yummy. With Mexican rice and refried beans!! Oh my words!!! ❤️❤️

Made this for supper this evening. DELICIOUS!!!!!!
Casseroles are what my family requests when they come to visit. Pot luck at work? "Please bring one of your casseroles", is what I hear.
I also make a beautiful homemade bread, so often I'll whip up a casserole, put that away, then go at some homemade dinner rolls or bread.
😋
This is a great video, and such a simple, good dish to make. Living in Texas, this is kind of our mother-ship meal!
Love casseroles. We grew up with 13 kids in our family so my mom & then the girls too when we started cooking,,! Yummy
Just printed and shared. Yum!
Now we need a haystack recipe!
Midwestern Haystacks
Each person gets a large bowl.
> Start with a base of tortilla chips, broken crackers (Ritz is great), or corn chips.
> Or start with a pile of hot rice or hot noodles.
> Top with ground meat in sauce.
> Then make your “haystack” choosing from ingredients below. Stack it up as high as you want to!
> Top it off with warm cheese sauce, salsa, and/or guacamole, additional shredded cheddar and sour cream.
Lettuce, shredded. Warm pinto, kidney or black beans. Diced tomatoes. Chopped green, yellow or red bell peppers. Shredded carrots. Corn. Black olives. Thin sliced scallions. Shredded cheddar.
Hack: Instant potato flakes is an alternative to flour or masa to thicken the cheese sauce (or anything else).
I love tacos! I also love casseroles! Match made in heaven!
Thanks for the video
Yummy! Youre right about cooking the onions with meat. That's how I do it. Thanks.❤
This is now a family favorite!!

A can of whole kernel corn (drained) would be good in it too! Looks delicious!
