Ingredients
* 1 lb ground beef
* 2 tbsp taco seasoning
* 2/3 cup water
* 1 red bell pepper, cut into 1-inch strips (optional)
* 2 .5 cups Old El Paso™ Thick 'n Chunky salsa
* 1 can sweet corn
* 6 flour tortillas for soft tacos & fajitas (6 inch)
* 2 cups shredded Colby-Monterey Jack cheese blend
Preparation
* Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix, water and bell pepper. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.
* Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
* Top with half of beef mixture. Sprinkle with 3/4 cup of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.
* Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.

Try it with black beans....Mexican rice & refried beans....oh ..I also add green chilies 2 tha mix!!! Yum!!!😋
walmart has a couple of brands of canned fire roasted tomatoes with green chilies/ jalapenos/or habanero chilies / adds another layer of flavor . . .
I don't understand why some don't get the recipe while watching. It's right there.
Im going to make this but im adding onions, green chilis and soft fried corn tortillas Instead of water I will put beef broth. Makes it so much better.

Thank you for sharing, I think it is very similar to the old Tex-Mex Tamale Pie casserole. Only it uses layers of tortillas vs corn meal. I will definitely try this one ! 🤗🥳⚘️⚘️

Ok I have a couple of questions, as there are a few discrepancies. Is it 2 1/2 cups salsa or 3? When do I add the bell pepper? Other than that, this looks fantastic..
2.5 cups salsa and bell pepper is optional.
The first time I made this using another recipe didn’t work out as well. I want to try this , but I use raw flour tortillas instead of pre cooked?

THREE cups of Salsa??? Yikes. Thats a " No " ... I'd add some petite diced fire roasted tomatoes. Corn Tortillas. ..not flour.
