Passover Cauliflower Steaks with Chimichurri and Mashed Potatoes!

- These cauliflower steaks are more than just a random vegetable vegetarian dish. Cauliflower is one of the most indulging meals you can serve your guests on those special nights when you want to impress everyone. This humble, yet, stunning dish is perfect for a passover main course, if you are breaking your head what to serve those who don't eat meat during this holiday. I hope you'll give it a try!
ingredients:
2 big cauliflowers
1/3 cup olive oil
1 tbsp paprika
1 tsp cumin
1 tbsp garlic powder
1 tsp salt
1 tsp pepper
For the mashed potatoes:
6 ukon gold potatoes
salt and pepper to taste
1/4 cup cashew milk
2 tbsp olive oil
1 sautéed onion
instructions:
1) Cut each cauliflower in half, then cut the edge of each half, so you are left with a thick 1.5 inch piece of steak. keep all the broken florets for a different recipe.
2) Fill up a big bowl with water, place the cauliflower steaks and sprinkle 3 tbsp of kosher salt and 1/4 cup white vinegar. Let them soak for 15 minutes.
3). In the meantime, peel your potatoes, cut them into big chunks, place in a pot filled with water, add 2 tbsp kosher salt, and cook until for tender.
4). Preheat your oven to 400F. on a roast feature. remove the steaks from the soaking water, and place in a colander. wash very well. let the water drip down while you make the marinade.
5) Put all the spices in a bowl along with the olive oil. mix with a brush. then place all the steaks on a baking sheet, and brush the oil on both sides. Place in the oven, and bake for about 40 minutes total. Flip at the midpoint if you wish for both sides to be golden brown.
6) Now let's make the Chimichurri sauce.
place 1 handful of parsley or cilantro in a food processor. Add 2 cloves of garlic, salt and pepper, fresh squeezed lemon, and 1 small red chili pepper, or small red bell pepper if you don't want it spicy. Blitz for a minute, then open the lid, and add 1/4-1/2 cup olive oil along with 1 tsp honey. Blits one more time until all incorporated and transfer to a bowl.
7) To assemble:
Let's make the Mashed potatoes first.
remove most of the liquids from the potatoes pot, add salt and pepper and olive oil, and start to mash. then add the plant milk and mix until very smooth. (add your sautéed onions now if you wanted, highly recommended)
8). remove the cauliflower steaks from the oven. grab a flat dinner plate and add a few scoops of the Mashed Potatoes. flatten it down to get a nice base, like a well, and add one of the cauliflower steaks. drizzle from your sautéed onions on top, and garnish with a nice scoop of your Chimichurri sauce.
serve immediately as it's hot and enjoy!
