Yes!.. I never use vegetable oil for deep frying. I use mild olive oil. You can deep fry with the milder one. Cant go wrong with Olive Oil, compared to other oils. Or use lard.

always let the butter melt before adding the flour and always do equal parts flour to butter. so 50g of butter means you do 50g of flour, then you add the milk in slowly constantly whisking so get the sauce very smooth and can always add more milk as you go! hope this helps🤍

What you did in the beginning is called a roux. You only up the size if you're making a bigger batch. A roux is always supposed to be equal parts fat (butter) and equal parts flour...also you shouldn't rinse your noodles. The startch on there is what makes the sauce stick and when you rinse it, you rinse off the startch. Saying this with love.
Trisha one trick is make the recipe one time the way they say follow step by step then when u did it once then u change things or add more or less after u taste it if u think of your self as a chef then that’s what u need to do u less your coming up with something your self u can play around with more or less but trust me u haven’t been cooking long enough and you don’t have a very vast pallet yet keep practicing your getting better and keep learning the tips and tricks even the basics are important from cutting to stirring to mixing everything is important don’t give up

omg I literally just made a huge batch of mac n cheese the other day and was going to make fried mac n cheese balls for dinner!! When making the sauce I add gochugaru pepper powder, onion powder, mustard powder, salt, all spice, black pepper, chipotle flakes, mirin, prepared yellow mustard, and potato starch instead of flour gives it's a smoother texture. Cook it all for 2-3 minutes add milk (1.5L - 2L), let it re-heat, add in cheese (500g - 700g) stir constantly until melted (this can take like 15 minutes). boil 500g of pasta noodles. and I make a topping with salted butter (1/2 cup) and panko crumbs (2 - 2.5 cups) by browning them in a pan then I bake the whole thing for 20 minutes at 450 in two 9x9 pans
This is also pretty much my spice mix for fried chicken breading except I add sugar instead of mirin and add extra paprika and garlic powder, potato starch is the best and its crispy af when fried. and for the egg wash I add lousiana hot sauce

Since you’re using cheese which will thicken up the sauce you can try a ratio of 2-2 1/2 T butter and flour per cup of milk and they were turn out less dry. I make Japanese croquettes with potatoes, cooked ground beef ( you can sub ground turkey too), and sautéed onions, carrots, and cabbage, all finely chopped. Super easy to make. You use a sauce called “tonkatsu sauce”, but if you can’t find it, mixing ketchup and Worcestershire sauce together works in a pinch, which you drizzle after the croquettes are done.

I find those disposable plastic Tupperware types work best, when you put item in the flour shake the container and coat the item, when you take out of flour be sure to shake off excess flour, dip into egg mix turn container to coat, remove item let excess egg mix drip off, put into bread crumbs, shake to coat then using your hand grip some bread crumbs and press into item. Use 2 hands to press crumbs into item. Then carefully set aside, when finished breading all items put back in freezer for 5 or so minutes uncovered to help dry out the items b4 frying. B4 you put each item into oil tap the item so any loose crumbs fall off and don't fall in oil. Then put item in oil to fry.
You really have come so far with your cooking skills!! And your probably saving alot in take out and delivery .. but my advice is use less pasta or double the sauce. I notice you comment often about lack of sauce but thats why too much pasta for amount of sauce... just advice no judgement 🥰😘
