    1 liter full-fat milk
    1/4 cup sugar (adjust to taste
    A few strands of saffron (optional)
    1 tablespoon chopped pistachios and almonds
    For the Falooda:
    1/4 cup falooda sev (thin vermicelli)
    2 tablespoons basil seeds (sabja seeds)
    2 cups water (for soaking basil seeds)
    1/4 cup rose syrup
    2 cups chilled milk
    2-3 scoops of vanilla or kulfi ice cream
    Chopped nuts and rose petals for garnish
    Instructions:
    Preparing the Rabri:
    Boil the Milk: Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
    Simmer the Milk: Once it reaches a boil, reduce the heat to low. Allow the milk to simmer, stirring frequently, until it reduces to half its original quantity. This process might take around 1 hour.
    Add Sugar and Flavorings: Add the sugar, cardamom powder, and saffron strands (if using). Stir well and continue to simmer for another 10-15 minutes until the milk thickens to a creamy consistency.
    Garnish the Rabri: Add the chopped pistachios and almonds, stir, and remove from heat. Let it cool completely and refrigerate until ready to use.
    Preparing the Falooda:
    Cook the Falooda Sev: Boil 2 cups of water in a pot. Add the falooda sev and cook according to the package instructions (usually 5-7 minutes). Drain and rinse under cold water. Set aside.
    Soak the Basil Seeds: In a bowl, soak the basil seeds in 2 cups of water for about 20-30 minutes or until they swell up. Drain and set aside.
    Assembling the Rabri Falooda:
    Layer the Ingredients: In serving glasses, start by adding 1-2 tablespoons of rose syrup at the bottom.
    Add Basil Seeds: Spoon a layer of soaked basil seeds over the rose syrup.
    Add Falooda Sev: Add a layer of cooked falooda sev on top of the basil seeds.
    Pour Milk: Pour chilled milk into the glass until it’s about 3/4th full.
    Top with Rabri: Spoon a generous layer of chilled rabri over the milk.
    Add Ice Cream: Place a scoop of vanilla or kulfi ice cream on top of the rabri.
    Garnish: Garnish with chopped nuts and rose petals.
    Serve immediately and enjoy the delicious layers and textures of Rabri Falooda!
