    How To Make Greek Lamb Kleftiko | Ep 531
    1 lamb shoulder (app 2kg)
    1 tsp salt
    cracked pepper
    2 tbsp dry oregano
    1/2 tsp dry thyme
    5 crushed garlic cloves
    3-4 tbsp olive oil
    1 lemon, thick sliced
    5 small potatoes
    1/2 cup white wine, or water
    3-4 bay leaves

    Hello my friend Henry. I am from Greece and in the Greek "kleftiko" we put green peppers, hard cheese in large cubes, garlic cloves, onion, salt, pepper and oregano or thyme. Wrap all this together with the meat in oilcloths and tie them well with string. Bake at low temperature in a pan for at least 4 hours. At the end, grind the vegetables and the broth to make a thick sauce and add it to the meat.

    Last time I eaten lamb kleftiko was in Cyprus back in 1996, thankyou for the video and its on our menu for next week.

    Thank you. I know this video is a few years old but I couldn’t use my oven and this recipe in the slow cooker was great. I just added a touch of smoky paprika as well. Was deeeeelicious !

    Hmm..no Rosemary? I have done something similar but simpler in the past - lamb shoulder, stabbed and filled with crushed cloves of garlic (about the volume of 2 fists :-) ), rubbed in dry or fresh rosemary, oregano, put it in an oven bag then add olive oil & lemon juice, seal and microwave around 650watts for 30 minutes. I save all the liquid, blend it and make a thick garlicy sauce/gravy to go over the lamb. Sometimes if I'm in a hurry or just lazy I just toss the crushed garlic in the bag with a few sprigs of fresh rosemary. Looks like I should try cooking it for a lot longer and at a lower wattage, maybe some extra liquid. Not sure if I'm ready to experiment with doing this in my Instant Pot (aka modern electric pressure cooker) just yet.

    My favourite meal, did it for new year's family meal, I was the boss 😎💪💪💪, only thing I did differently is placed the garlic slices inside the lamb in gashes, used a glass of white wine to start teaming it off start it with, I browned it for 20 minutes in the oven at the end ......... And I used Boer goat shoulder too..... Great use of a slow cooker though 👍... Keep on truckin' Henry 💪😎🤗 ....gonna do an oldie of yours soon (kofte kebabs Greek style)😉

    I had a gf who's family were mediterranean. made a dish similar to this, also sometimes used chicken. only difference was she used the oven on low. makes a great pita sandwich.

    Looks delicious. I don't have a slow cooker but will try this on my Kamado smoker grill. I am surprised that only 1 tsp of salt is needed for that much meat.
