    I had this in Rhodes and it had halloumi cheese grilled on top. Had it every other day for two weeks!!!

    Exactly the recipe I need for my Christmas Dinner tomorrow. All in one pot, (slow cooker in my case) and no extra veg to prepare. I'm using goat instead of lamb, but I'm sure it will taste wonderful.

    ohhhhhh lamb😍
    I took a chance on doing this but I used cling film and then foil on some ribs to steam/roast them in oven on low and slow in a shallow roaster, I was scared it would melt but it didn't and braised them beautifully, then I put them on a rack and finished them under the grill. So try doing that next time for a slow braise and keeping all those lovely juices contained.

      It works Keef, I was dead surprised too after I saw it on a cooking show being used to slow braise meat tightly covered with cling film and then foil over it.

    That is a dam fine dish sir. I do have one question though. Why white wine?
    Seems a hearty red would be in order.
    Perhaps a red when cooked down would be overpowering?
    Not a criticism just curious and love learning about cooking. Thanks

      The recipe requires red wine. Red or white wine goes very well with lamb.

    Hello gastro Keef . Oh no poor Mrs Keefs has to go get more foil. Lol. What happened Mrs Keefs there one minute gone the next and just like magic appears again. Mr Oliver did a thing about preserving lemins and giving them as xmas prescents many moons ago. Bleeding lemons if he gave me a jar of lemons for xmas mr cheap skate. have a great bank holiday bye

    but what I have found with slow cooker method....all the flavour of lamb is gone.. completely steamed out..

      Hmm, many interesting points here. First off, I don't think I'm pandering - about half my audience is US, only about 10% UK. The words you mention are actually Spanish, and I lived in Spain for 7 years so they come more naturally to me now. Global knife hype - haven't heard any. It's a beautiful knife and when it's sharp it does the job well.
