Kleftiko Leg of Lamb | Greek Roasted Lamb Recipe

  • Here's an absolutely superb way to make Greek kleftiko leg of lamb from the island of Crete. This traditional Greek Roast lamb recipe is very easy to prepare, done in one pan and is a hit with lamb lovers and non lamb lovers alike.

    I first had this dish in Thasos. It was sooo good and so earthy with all those herbs. I have since recreated it here at home but i used shoulder of lamb and i cooked it on a slow heat for 5-6 hours, that way the meat just falls off the bone, it always turns out sublime. Saying that, this is the closest recipe that i have seen on youtube to the one i use. Great job mate.

      @Wendy RS I usually cook mine at around 160°C if I want to cook for around 7 hours or 180°C if I want it ready in 5-6 hours. This is based on the size of the cut of meat you're using. You also need to make sure you wrap it tight. I use foil, and I make sure that there are no gaps so that the moisture is kept in and the meat doesn't dry out. Good luck 👍🏾

    The secret to perfect Kleftiko are Temperature & Time
    Low temperature (100f) and Long time (5 hours minimum).
    Kleftiko in Cyprus always has potatoes (cut lengthwise in half), and a glass of white wine added. A few sprigs of Rosemary also can be added and my mum adds a stick of cinnamon; rarely if ever, does it have Feta...however, in Crete feta may be an accepted ingredient.
    Rather than cook in parchment, use a deep casserole dish with a lid. Make a thick paste of water and cornflour and seal the edge of the lid to the rim of the dish...THEN wrap tightly in Aluminium foil to create an airtight environment and cook for a minimum of 5 hours at 100f.

    Thanks for the video! I recently cooked a leg of lamb dry-rubbed with herbs I brought back from Crete. I'll have to try this recipe, too. It looks amazing. On a different topic, I would love to see a video on making λυχναράκια (καλιτσούνια).

    Το κλεφτικο αγαπητε μου φιλε εχει την δικη του ιστορια. Οι κλεφτες στο βουνο οταν εκλεβαν ενα αρνι το εσφαζαν το εγδερναν α οογαν ενα λακο στο εδαφος αναβαν φωτια μεσα στο λακο μετα μεσα στο τομαρι του ζωου εβαζαν το κρεας το εχωναν μεσα στο λακο και το σκεπαζαν με χωμα για να μην τους προδοσει η μυρωδια της τσικνας και το αφηναν ολη την νυχτα. Πηγαιναν την αλλην ημερα το ξεθαβαν για να το φανε. Ηταν ο τροπος των κλεφτων για να μην προδοθουν!

    Not sure how that mess of a dish tastes but it looks disgusting and never forget you also eat with your eyes so a dish has to look good as well as taste good. Thumbs down 👎 from me
