I can't use the sensor to create routines on Alexa, I can only see the temperature on Alexa :/

Which Zigbee gateway are you using it with? I am back on the ConBeeII, SkyLink was just too unreliable with my RPi, I have had difficulty getting the Sonoff kit to work well with other Zigbee Gateways. (on my Home Assistant install)

Just plain old ZHA using the Sonoff USB dongle. Tried MQTT but didn't get on with it.
