The traditional British Christmas dinner is a true winter feast. It can contain many elements, but most commonly a Christmas dinner is roast turkey, stuffing, roast or mashed potatoes, pigs in blankets (pork chipolata sausages wrapped in bacon), brussels sprouts, parsnips, and other seasonal vegetables. There should also be lots of rich turkey gravy, and sometimes bread sauce. Of course, the meat doesn't have to be a turkey - goose is actually more traditional, but a big hunk of beef, pork or lamb wouldn't be out of place.
In this video, I show you how to roast a turkey, make sausagemeat stuffing, bread sauce, roast potatoes, sautéed sprouts with lemon, roast parsnips, honey-glazed carrots, gravy and pigs in blankets.

Love this! Literally the only video that’s a basic xmas dinner without all the faffing about!
Sprouts are awesome, Yorkshire pudding with everything, forget white sauces, go with the standard brown gravy with onions. oh and mashed carrot+Turnip, that is a traditional xmas dinner at my house.

Sproats are lovely as long as they're soft yummy 😋 we have them every week 😋
A lot of people complain that turkey breast meat is too dry for them, even after the bird has been prepared properly for basting. An easy solution to that problem is to roast the turkey upside down, i.e. breast side down in the oven, (NOT breasts on top,) so that the juices drain into the breast meat, moistening it, rather than just drain out directly into the bottom of the roasting pan.

@@KeefcooksNow show us a complete Christmas Dinner for 13? (9 Adults and 4 Children)? We changed to buying a couple Turkey Crowns, Roast Potatoes and Parsnip are peeled, cut then Pre Boiled before being placed around the Turkey Crowns (set on 2 Large sliced Onions) for it's last hour of cooking. Pig's in Blankets and 2 or 3 different Home Made Stuffing's also go into the Oven. On the hob we use Pressure cooker for Mashed Swede, Another with a divider for 2 Veg. The last hob for a 3rd Veg. When the Pressure Cookers have steamed long enough they are removed which frees up 2 hobs for Bread and White Sauce and maybe Boiled Potatoes. I look forward to it every year and the whole family help. We leave the Christmas Pudding until later in the day which is easier because it requires a Pressure Cooker and we have all probably eaten to much.

Hello Keef, when using a induction hob try laying a silicone mat down on the cook surface and your pots will not slide. The silicone mat will not interfere with the electromagnetic field from the coil in the cooker.

I adote turkey...but the hubby hates it....so we end up making Pork fricasee....Oh mama...it is so delicious..Im practically drooling...mind you he does it french style which means he puts celery in the sauce....MAN whoever has tasted it has left with the recipe...........AND CHRISTMAS IS GOOD!!!!!!!
Another brussels hack is make a roux with flour, double cream and butter, lots of salt and pepper, then add very smoky bacon bits and let the boiled brussles cooked for a few minutes in the sauce. It is simply amazing!
Had them every Christmas and they're always a winner!

About sprouts: I have come to really like them i agree, boiling too long is a guarantee of disaster! We have taken to shredding them while raw in a food processor and then a fast saute in tasty fat, like bacon fat. Don't cook them too long, and they are amazing. They are also good with a little mustard mixed in. Sometimes guests don't even know what they are when shredded. Thanks, Keef!

Everything looked tasty and lovely. I'm a little scared of the bread sauce. The vegetables made me hungry for all three! Loved the balls of stuffing. I am going to have to try that.

KeefCooks I have never seen a sauce like that. But it is similar in its use of breadcrumbs as a thickening agent to the Mexican mole sauce that i loved when i lived in Mexico. I never had the red or yellow mole, but the green mole is divine. It has bread crumbs, ground almonds, pumpkin seeds, and sesame seeds as well as various seasonings and chicken broth. You cook a meat such as pork in it (like a stew). I am sure a person unfamiliar with it might find it a bit scary since the green color is reminiscent of a baby's diaper but the smell and taste is wonderful. It is best not to think of yhe diaper. You should try turkey cooked or rather smoked on the grill while basted with a mixture of butter, vinegar and garlic. If you can get hickory wood chips for the smoke, it gives it a great taste. It almost doesn't taste like turkey, but more like pork.
Thawed in the fridge for 1-2 days for food safety. Never cook from frozen.

I'm glad I'm not the only one that hates sprouts! Although, I did make a Brussels sprout frittata not long ago, and that was really good.
I think I was diplomatically trying not to say 'I hate sprouts', but I'm a terrible liar.
Oh I love sprouts..one of my favs..But they MUST be FRESH..boiled for 1 or 2 minutes , very little water, add butter and pepper...and love it

Hello from the US! I have a recipe for Brussels sprouts that will make you and your family happy to have them! Ingredients: 1 lb Brussels sprouts, 1/2 onion chopped, 3 or 4 cloves chopped garlic, 2 9 oz. pkgs Mexican chorizo or 1 pkg dried Spanish chorizo, 1 cup white wine, 1 tablespoon butter. Boil the Brussels sprouts for ten minutes, then put them in ice water. If you're using Spanish chorizo, chop it and add a tablespoon of oil or butter to the pan. Saute the chorizo, onion and garlic until the meat is lightly browned. Add the Brussels sprouts and wine to the meat mixture and simmer for about 30 minutes, stirring occasionally. Remove from heat and stir in a tablespoon of butter.
I like to cut the sprouts in half when I take them out of the ice bath. They're much more tender that way.
I always put a few rashers of bacon over my turkey, then take off to crisp-en the skin up, and make myself a swift bacon butty when no ones looking. Cooks perks. I'm really enjoying watching all your videos, it's getting my gastronomic juices flowing.

I was watching your pork pie video yesterday and it sparked a memory from many many moons ago when I was but a wee lad of me and my granddad eating a cold lamb pie very similar to a pork pie, is this something you've ever come across? I've tried googling it but can't seem to find any recipes which is making me think I might be imagining it. Anyway, hows about giving something like it a go, it could be very tasty with the right herbs and spices.

Love bread sauce, don’t think people do that and onion sauce with their roasts so much these days....always used to be bread sauce with chicken and onion sauce and mint sauce with lamb.......looks a lovely dinner.
The canteen at one of the art colleges I went to used to do onion sauce with lamb - first and only place I've seen it, and I loved it!
For crispy skin, put raw turkey in fridge overnight, UNCOVERED. It really works.

Nice to find out the British Christmas dinner. In my case, Christmas is all about pork meat (sauerkraut leaves wrapped ground pork and a little rice) and fillet mignon. We have turkey for new year's eve. This is just tradition, that varies in different parts of Europe and world.

I don't think bread sauce has any specific regional association. Made some this Christmas - still not massively keen!

Just looking for New Year recipes and came across you. Love your calm delivery and clear instructions.
I think you would enjoy the bread sauce more if you use one whole small onion pierced with 12 cloves bring to boil in the milk then don't heat the breadcrumbs in the milk just add and let them absorb the liquid then just leave the onion sitting in the sauce again to infuse the flavours. A generous sprinkle of fresh grated nutmeg should do the trick. This is my Dad's recipe from his mum 1920s Southampton. Enjoy, I hope.
Please make some hearty soup and/or some stews as well if you can or have time to. I WILL WATCH IT FOR SURE....! i am one of your fan now !

Like a lot of people, i'm preparing for a Christmas dinner and have made a cake which is ready for icing. The icing recipe calls for the use of glycerine which i cannot find in this part of the world for love nor money! Is this vitally important to use or is there something else that can used to make a 'royal icing'. Many thanks & a Merry Christmas to you .
The glycerine just stops the icing from setting too hard - it's not really essential.

Hi and greetings from Oklahoma! This looks like a tasty meal. I was completely unfamiliar with what would be a traditional British Christmas dinner- so I was sort of surprised by the bread gravy and the stuffing. Not sure about the white bread in flavored milk- seems like a real basic or peasant recipe (simple is not always bad). The stuffing looked like a pork meatloaf or meatball- almost like it should be simmered in a nice thick marinara sauce or finished with a painting of ketchup....just my American perspective I guess....Anyway, the whole meal looked good and definitely holidayish! Bread sauce is one of my favourite things in a Christmas dinner, but not everyone likes it. The only thing I would add to this dinner is cranberry sauce (and maybe a Yorkshire pudding).
It's definitely different from the American standards I'm used to but I'm inspired to try this meal. It looks amazing!

I don't know if you're being sarcastic or not. It's a sauce, goes well with poultry. Not very common these days.
Not sarcastic at all, I am Italian American and never made a sauce from bread. Typical sauces/ gravy are made with flour- cream-butter- tomatoes etc. Thank u for the reply. I have looked up some recipes

Good question - it's not very common.
Boiled milk...peppercorns.salt..diced onions ..sliced diced bread...mix thouroughly. .simmer 5 mins...stir.
Adjust seasoning. Leave to cool down a little.should be thickish..add as a side to poultry dishes....love or hate lol
I brought a turkey from a very well known company and when I went to collect it I couldn't believe what I was seeing. The turkey in the box was 6" long and the turkey itself was 4".I phoned up and they sent me a voucher so I can use it another time. Wont be doing that again to say the least.

Yeah, brussels sprouts definitely fall into that "awful if boiled to hell" category, but when done right, they are really delicious. Somewhat unrelated, I'm going to try the mince pie recipe, just need to figure out what I have to do for the suet I can get easily in the states. I'll let you know how it compares to the stuff from the jar (at least in my opinion, I am optimistic though)

The thing is Keef you like spouts al dente wheras they need to be boiled alive so they are mushy. Then you get the true flavour. Merry Christmas Keef and I'll look foreword to more of your vids

Keef, no one should cook a Turkey "frozen", esp in the US. They stuff bit up the cavities and freeze it all together. You need to allow 2 days in the fridge and perhaps running it under water at the last to clear all that out.
Cook the turkey upside down to keep the juices in the breast.
I am liking your comments regarding instructions on foods for cooking. They are usually for too long a time and too high a temperature. It's all, as you say, making sure that people in todays society, who are treated as completely clueless, will not get ill and sue them! Same with most non perishable goods, they generally say "refrigerate" when there is no need to.
Your videos are very good, enjoyable and easy to understand and follow. Last night I made paella following your recipe and it was a triumph, so many thanks - I cant comment on your video as it is "comments disabled". Like you I had the same paellera and had to span 4 gas rings and keep turning. Just noticed your induction hob on this Christmas dinner video - is there a brand you would recommend as I think large pans like the paellera would be ideal for cooking on it.

Recommendations, not really - the one I have is a single zone and I bought it from IKEA because it a) was cheap, and b) just plugs straight into the wall without having to be permanently wired. But a word of advice - if your paellera is really like mine, it will have dimples on the bottom and this stops it working with induction because not enough metal is in contact with the hob.
Hello and thanks. Yes, I have a dimply bottom as well (!!), so as you have pointed out the induction hob will not be very effective. I guess that as I apparently made a "thumbs up" paella working with the gas hob and using several rings, it would be wise to keep to this method. If it is not broken, don't fix it, or words to that effect.

Ooh, controversial. We never have YPs with Christmas dinner - plenty of other stuff to fill up on! Here's a snippet from an article in the Daily Mirror:

my mother made Brussel sprouts in a way to trick my brother in to eating them, He ate a plate full and said they were great. This was after he went on a rant about never wanting to eat them again! she had made batter and deep fried Brussel sprouts ( parboiled for almost 10 minutes. any ways he said these are great can I have some more? mom said oh you wont like them after I tell you what they are as she served the rest to me and my sisters. lol then after they were all served he got pouty ... then she cut one in half and told him what they are. lol. I cried as we laughed at him. So never say no to food till you have tried them in many different ways. But I still wont eat Durian fruit.

dear keef i have a request which i think may be very popular ... instead of just showing everyone how to cook a dinner ... please could you film a sunday roast dinner being enjoyed by your good self and of course the lovely mrskeef and a sprinking of friends/family on lovely festive table with loads of plonk ... an hour long video ... lots of warm lighting ... chattering ... clinking of glasses and all round bon amie! 💗 ... because i live on own and i would love to enjoy my bit of cheese on toast and hot chocolate (cat on lap! : ) whilst watching you all feasting and enjoying yourself for an hour ... mmm i can almost smell the stuffing and gravy!!! ... what do other viewers think please ... i have been looking for weeks but can't find any other videos that are lovely and relaxing!!!

I love sprouts...... Best part of Christmas dinner..... And there is always loads.......lol.... God hate bread sauce though..... Turkey gravy is me.... Mash, roast parsnips and roasties....... Cant argue you with that Keef........ Aldi etc do a great turkey crown which is perfect for the auld August Christmas dinner...... But I go all out for Christmas. Roasties, mash, fried sprouts with smoked ham. Honey glazed carrots....... I also do a breakfast for herself and myself. Proper scrambled eggs with parma ham and home made bread....... The leftovers of the ham and turkey make great pasties that last for weeks in the freezer........
Lemon peel on the sprouts...... hmmmmmm......... Have to try that before producing it at Christmas...... But I'll take your word for it now..... lol

Well. I'm hungry now. lol *sigh* On a serious note, this truly does look DELICIOUS! Roasting the veggies in goose fat, I wonder what that tastes like! Here in America we (typically) use either butter or olive oil, vegetable oil, etc. I've never had goose fat (or meat, for that matter) in my life! lol I can only imagine how much flavor it adds though... Any time animal fat is used to cook/roast something, you KNOW its gonna be good! Well done, sir! ^_^

4:01 -- Brussels sprouts -- how to eliminate the nasty taste
There is a VERY SIMPLE way to eliminate the nasty taste of Brussels sprouts.
Cut the sprouts in half through the stem. Trim off the stem and a bit of the core.
Boil a litre / quart of water. Add a half teaspoon of bicarbonate of soda / baking soda.
Add the halved sprouts to the boiling soda solution. When the water returns to a boil, boil the sprouts NO MORE THAN 10 MINUTES. (Otherwise, the sprouts will become completely mushy.)
Remove the sprouts with a slotted spoon and set aside (or just pour the contents of the pot through a strainer / colander).
If the sprouts are still not tender, finish cooking them in fresh, lightly salted, boiling water.
Sprouts that are cooked in this way will have no nasty, bitter taste.
Regarding PARSNIPS, they're sweet in the spring -- sweeter than carrots -- after they've endured a hard freeze in the ground. Don't bother eating them in autumn, when they'll be bitter.
