In the UK we call that kind of celery celeriac! For our Christmas dinner we classically have roast turkey with stuffing and "pigs in blankets" with all the trimmings, but we make it vegan with all vegan substitute meats, and even a vegan cauliflower cheese!! Thanks for sharing these great recipes 🎄
It just makes so much sense to make an almond dessert with almond milk. How is that not the traditional way to do it even for people who consume dairy?
Sorry if this is a bit of topic, but I know you're always open for video ideas. So I would love to see a video about the impact of rice, since it's a major anthropogenic methane source and 50% of all water used in agriculture is used for rice, that's just mind-blowing. I know it's a staple food in many regions of the world but still, living in industrialized western countries we have the choice. So yeah, really interested in your take on that :)
As a German living in Finland this was really fun for me because it's basically a mix of what we'd traditionally have for Christmas in Germany and in Finland :D
Duck or goose with potatoes and red cabbage in Germany and rice porridge in Finland. Most Finns are very purist about their Christmas porridge though and wouldn't get any fruit near it, just sugar and cinnamon. Hiding the almond is also a thing and whoever finds it has to do the dishes, or gets a treat or gets married next, traditions vary from family to family.
In Germany we often also have potato salad and sausages on Christmas eve and my family has been eating the vegan version of that for some years now although none of us is fully vegan. Making the potato salad with broth instead of mayonnaise is just a nice break from all the heavy Christmas dishes and I never liked the meat sausages so I get tofu or seitan sausages instead.
The celeriac "duck" looked awesome, I have to try that!
We have out own tradition (sorry it is not vegan but the meat part is because of my mum's parents who passed when she was a teenager and she makes it in memory). So it is roasted chicken with liver stuffing, dumpling made out of old bread (sounds weird but it is super yummy), red cabbage with appels and raisins and especialy for me carrots in soya sauce with mustard. The best part for me it the next day when we eat leftovers -we call it (we are not native english speakers so this is a translation) "the hiena feast"
Your dishes looke so good, I was happy to see the meat substitute was gluten free as it is hard to find. Where I live even most tofu has gluten.

We dont use newspaper for risengrød. We use a tovel and a blanket and then in our bed 😊
I lived in Macedonia for a few years and for new years they bake a circular bread with a coin in it. The person who gets the coin in their piece gets good luck for the year!
I’m from the U.S and a lifelong vegetarian and now vegan. Some of our family’s more unusual, but still traditional to us, Christmas dishes are Spinach pie (spanakopita done our way), turkey balls (fried nut, rice and tofu balls) with gravy, and because we can’t forget our Mexican roots, chile con queso. Yum! Thank you for sharing your recipes with us and I’ll definitely be trying the celery roast this year-it looked so delicious!

Love ittttttt. For us in Morocco, it's either roasted chicken with fries and green olives, or couscous with meet and 7 types of vegies. For the desert, we make a creamy sweet !
In Poland the supper on Dec 24th supposed to be 'vegetarian' which means there is a lot of FISH options (in catholic tradition fish is still considered as a non-meat dish:( ) but we do have one wonderful dish- it's called barszcz czerwony z uszkami, it's red borsh with tiny dumplings filled with mushrooms- but the wild from the forest, not the one we put on pizza. :D it's sooooo delicious, another dish for supper are dumplings filled with sauerkraut with wild mushrooms again! An old polish dessert is kutia: made of wheat, poppy seeds, honey, dried fruits and nuts, so yummy! And for drinks we have compote from smoked, dried fruits- it's not so popular anymore.
Could you do vegan Gulasch as well? I struggle getting it as savoury anddeep without the meat.

In Germany we kall the rice dish: Milchreis. Like: milky rice. We do also serve it with sugar and cinnamon or fruits on top (: LOVE it. We also got something pretty similar which is called "Grießbrei". It's like the softer one, we love to give it to little children.
I just xame across your channel and I love it! Went to Denmark almost 2 years ago and fell in pove with the country, the people and the food. There were vegan options but I also like to try one or two traditional dishes wherever I travel. Since then I've been trying to recreate Danish dishes in a vegan way with no mich success. I'm going to try your recipes. Oh and btw, Danish bread must be the best bread ever??
Lovely Thankyou for sharing this , wonderful to see how other countries eat for Christmas . In Australia as it’s Summer and very HOT we usually have cold cuts of Meat Seafoods Salads and beautiful desserts like Pavlova , Trifle Ice cream etc . My daughter in Law is from the UK so we have both Roast with all the trimmings Turkey Ham Beef , ha ha we can barely move after eating 😝🤪 Just the most Wonderful time of the year xx

Can't wait to try your wellington :) In Quebec, Canada the traditional XMas feast I grew up with was Turkey with stuffing, mashed potatoes, gravy, green beans with brown butter and roasted slivered almonds, cranberry sauce, meat pie (we call it Tourtiere) with ketchup, pork shank & meatballs stew. For dessert we had St-Honore cake, fruit cake, my grandmother raspberry mousse and fresh fruit salad. There is so much food, everyone leaves with leftovers!!! I've been vegan for 5 years now and every year I try to recreate a few elements of this feast. :)

What a nice feast! I’ll try it. We’ll have a vegan roast based on kidney beans and flaxseed with caramelised carrots and polenta. After a recipe by “la veganista”. It’s so easy, affordable and very delicious. Without any “exotic” ingredients.
I use the same whipped cream, and like it as well. My mom, who isn’t a vegetarian hates it and calls it always drywall compound. Have a Merry Christmas 🎄

The reason the dessert ris a la mande is named like it was French is because at that time French was considered fancier, so by giving the dessert a French name it appealed more to the higher social classes 😊
It is without a doubt inspired by other dishes similar to it, but I don't think anyone makes it just like we do in Denmark.
At my house no one is vegan or vegetarian, at least not for Christmas 🙈 We used to eat goose (my grandparents raised them), but now we get duck and we have always had flæskesteg (roast pork belly).

I'm French : the receipe of "ris a la mande" (riz à l'amande, almond rice) you are presenting is very similar of a French one named "riz au lait" = rice with milk, not vegan (dairy milk) but a lot of childhood memory for many French. It is eaten all year long, not specificly during the holiday season. Very nice receices, thanks for the video.
In Germany we have "Milchreis" which is also basically the same, we it it with apple sauce or cinnamon and sugar most of the time. Also a very popular food for children. I made it with coconut milk once which was just heavenly.
At the beginning it looked like ris a la mande was going to be the exact same thing as Spanish arroz con leche (rice with milk), but it does look different in the end.
Hey Gitty thank you for this video!!! Maybe, for next year, have you considered using cherry-jam and just add water or syrup to make it more liquid

here in Finland we make rice porridge in the same way 🤩 but whoever gets the almond in porridge has to do the dishes. 😂

I find it so interesting that Denmark and Sweden eat so different things at Christmas, when our two countries are so similar otherwise! Is it at all common to eat fish (like herring) at Christmas in Denmark by the way?

Thats not celery, celery don't have a big root ball. It's celeriac totally 2 different veggies 🤔
