      as long as you remove the skin on the place of your arm where the chicken will stick to, it will work fine.

      i can concur, without skin its much better. skin is keratinized i.e. dead, sickled cells, which dont exhibit the cell-level metabolism and microenvironment required by transglutaminase for its function

    Many people with gluten intolerance also have issues with other grains that contain similar proteins such as rice. Also some brands of corn starch may also contain gluten to watch out for.

    I know to check the soy sauce and use gluten free, as well as the other sauces used. If someone is cooking gluten free for a friend, that recipe will not end well. A simple mention to use a GF soy sauce, and check the other sauces would have helped.

      You purchase it. It's actually an enzyme. People just call it meat glue, because that's easier to pronounce than "transglutaminase"

    "You Can Do This" is one of my favorite shows on the Eater channel. I just want to point out, regular soy sauce is NOT GLUTEN-FREE. For some reason it is brewed with flour. I found this out after my daughter was diagnosed with Celiac Disease. If you are preparing this for someone with celiac or a gluten sensitivity, substitute with GLUTEN-FREE SOY SAUCE. I don't cook much, so I'm not sure if other Asian sauces (Hoisin, FIsh Sauce, etc.) contain gluten. Otherwise, I LOVE THIS SHOW.

      Butchers use meat glue all the time to mash beef trimmings into "diced beef" so chances are you've already had meat glue.

      Don't eat it, its fucking dangerous to your body, so dangerous the EU banned it (take that fact with a grain of salt), just type "meat glue" on youtube and you'll see the wonders

      it's not banned in the EU :D it's in use all over the place. the earlier, thrombin-based enzyme was banned as it was seen as a device for fraud. the ban was lifted as its uses were discovered and now it's produced with a microbe. Just as natural as any other enzyme in your body.

    Most commercial soy sauce contains wheat so he should be subbing out Tamari instead -- same with gojuchang, it has wheat in it as a binder, check those labels. Great idea though, stealing for my wife with celiac.

      My point was he's using a brand of gojuchang with wheat in it for the sauce (it's the first ingredient). He made gluten free dumplings then dumped gluten sauce on them. Anyone with celiac would get sick eating that.

      source please, it doesnt make sense that McDonald would use it. there are cheaper binders for ground meat such as the egg and corn starch that was used in this recipe.

    So, gloves are good. Meat glue, by definition, glues meat... of which all your fingers are comprised... learned the hard way.
    It's not like super glue, and it's only a problem if you're working with enough food to feed multiple people, but it's still super uncomfortable after a while.

    Is cornstarch gluten free?
    Anyway, there is nothing wrong in consuming gluten unless one is gluten intolerant (Celiac's disease). Over the past few years it seems that everybody has become gluten intolerant. I hate it when a medical condition mutates into a lifestyle aspect.

    Good video and cool reciple, but of course a pure meat based dish is gluten free!
    Saying it's gluten free is like saying butter is "sugar free" or sugar is "fat free".. big companies do this kind of thing all the time on their packaging and frankly it annoys me.
    If someone has a real gluten intolerance and doesn't realize that this is "gluten free" then they have a bigger issue - the fact that they're massive idiots.

    surely its 100x easier just to wrap the pork ball in chicken skin, then use a bulldog clip to hold the bunched up top together while it fries so when it comes out the skin is crispy but you dont need to muck around with this glue business and plastic wrap...

      the 'meat glue' is an enzyme, thus a protein. it's even produced naturally. your body would be able to break it down. as for 'fucking up your lungs', anything can be toxic/poisonous, it just depends on how much is consumed. the labs making these food grade products have stringent policies that ensure the safety of employees, i.e. filtered biosafety masks

      Not unless you buy a specific and weird one mixed with no gluten free soy products.
      There's sugar, red pepper, vinegar and salt in that red box.

      What's unhealthy? If you are talking about the meat glue, it's an enzyme that your body actually makes naturally. But if you're talking about deep frying, then you have to keep in mind that one must nourish not only the body, but also the soul.
