- Tips and tricks guru Clifford Endo is at it again, this time with a crispy, crunchy, deliciously decadent gluten-free work-around for making dumplings at home. In place of normal dumpling wrapper, Endo uses chicken skin - plus a little bit of “meat glue” - to enclose his dumpling filling. Watch the video above for a how-to.

Wanted to see how crispy it was by watching you eat it. You missed a trick
I was gonna leave a similar comment. Need to see someone try the food.
could i use meat glue to stick a chicken breast on my forearm? asking for a friend
what a fucking stupid question.
as long as you remove the skin on the place of your arm where the chicken will stick to, it will work fine.
+vince j I dont think its a stupid question, and are you even sure about that? cause your skin is also made up of protein
dumb gal are you telling me that you don't remove the skin before you glue various cuts of meats to your arms? It works much better without it, I've had first hand experience.
vince j haha what?
i can concur, without skin its much better. skin is keratinized i.e. dead, sickled cells, which dont exhibit the cell-level metabolism and microenvironment required by transglutaminase for its function
Looks great. I dig the laid back, yet informative style of this video host. More please.
You should sprinkle on the sesame seeds after you drizzle on the sauce. That way they catch on better.
Got to admit I don't think I've ever seen that before. 10/10 would try.
This guy is just amazing for instruction.
May he host more !
Nice!!
Neat idea! Too bad you didn't show us the inside of the fried dumplings...
Look great
Many people with gluten intolerance also have issues with other grains that contain similar proteins such as rice. Also some brands of corn starch may also contain gluten to watch out for.
I want thiss!!!
Mmm, mmm, mmm. They look delish.
I'm gonna try this recipe, but gonna keto-fy it. Thanks!
You are a genius
1:04 “if the cameras weren’t on, I’d [take my beautifully clean hand and get into it, guys]”
Arrgghhh he didn't eat it for us to hear the crunch. heheheh. Looks delicious. Thanks for uploading.
whats the beat that starts half way through?
Mattias Andréasson Brooklyn Flava 2 Found it myself. Thanks Eater!
So many negative comments, this is actually quite innovative and i think its great!
This is definitely just an excuse to eat deep fried chicken skins. You could just use rice flour to make the dough.
Where's the fun in that? Thanks for watching!
unless he using wheat free soya sauce these cant be gluten free given the fact soya sauce is made from fermented soya and wheat?
There are gluten free soy and hoisin sauces out there! Thanks for watching!
Loving the low-key sass 🤣😂
Handling protein binder with your bare hands it the best way to get an eleventh finger.
Song ?
Crispy chicken skin and pork filling on the inside. What is there not to like?
glutte free, fat full.
Yeah, but anything gluten free is instantly healthy. It cancels out the fat.
some people actually do have gluten allergies
celiac has become trendy woops
I know to check the soy sauce and use gluten free, as well as the other sauces used. If someone is cooking gluten free for a friend, that recipe will not end well. A simple mention to use a GF soy sauce, and check the other sauces would have helped.
hey how do you make a meat glue? :D
You purchase it. It's actually an enzyme. People just call it meat glue, because that's easier to pronounce than "transglutaminase"
I would never make this at home but I wouldn't turn my nose at ordering this at a restaurant.
Interesting.
Tastsicles!
thats actually the most stereotypical american approach to glutenfree (something thats supposed to be healthier) food that i have ever seen XD looks super tasty though i have to give him that :)
What about rice won ton wrappers?
Where do you buy chicken skin?
We used the skin from the chicken we used for our Chicken in Waffles: czcams.com/video/aQHNERNoyEA/video.html
Thanks for watching!
....'you're going to scoop it out in a sad pile..." too funny.
Or maybe use a string to tie up the bags?
That would've been the easier way to do it;
Or, crazy idea, skewer it with a toothpick?
You lose all the juices from the inside with toothpicks and risk the dumplings bursting with string. Thanks for watching!
REKT!
"You Can Do This" is one of my favorite shows on the Eater channel. I just want to point out, regular soy sauce is NOT GLUTEN-FREE. For some reason it is brewed with flour. I found this out after my daughter was diagnosed with Celiac Disease. If you are preparing this for someone with celiac or a gluten sensitivity, substitute with GLUTEN-FREE SOY SAUCE. I don't cook much, so I'm not sure if other Asian sauces (Hoisin, FIsh Sauce, etc.) contain gluten. Otherwise, I LOVE THIS SHOW.
Isn't that the thing being used to make fake steaks?
Call them wraps, pouches, or purses but dumplings in every culture refers to a soft doughey pocket with various fillings.
Some actually dont have filling, but are just dough all the way through. Point being, the dough is the essential element.
I was hoping to see him eat it.
The plate is authentic, a common design on Chinese dinner tables.
Then you called gochujahng "gochujaeng" and my mouth cracked a nervous smile.
Then you said hoisin sauce is a bean sauce and the reaction I had was from Pokemon when someone said the farthest thing....
It's plum based...
Dude....
That Meat Glue sounds a little scary. Kinda reminds me of something from Silence of the Lambs or Texas Chain Saw Massacre.
Butchers use meat glue all the time to mash beef trimmings into "diced beef" so chances are you've already had meat glue.
Don't eat it, its fucking dangerous to your body, so dangerous the EU banned it (take that fact with a grain of salt), just type "meat glue" on youtube and you'll see the wonders
it's not banned in the EU :D it's in use all over the place. the earlier, thrombin-based enzyme was banned as it was seen as a device for fraud. the ban was lifted as its uses were discovered and now it's produced with a microbe. Just as natural as any other enzyme in your body.
but they go wonderfully with some fava beans...
this guys awesome. this guy and lucas- thats the team. the hipster douche has been okay lately though too. maybe it helps he's smiling and being nice.
Someone please tell me where to get the chicken skin. Does he just buy chicken thighs with skin and just cut it off and use the thighs for something else??
They should sell chicken skins individually wrapped like Kraft cheese singles.
Shh then the price would go up
hey, Hoisin sauce isn't blackbean sauce :)
only problem with this is its difficult to get 20 dumplings worth of chicken skin..but delicious idea.
Go to a butcher and ask. I mean what do they do with the chicken skin after making boneless and skinless chicken thighs? Throw em out?
What about substituting chicken skin with beancurd skin..? I think thats healthier...
or condoms
Nooo! To meat glue! I'll stick with toothpicks and regular wonton wrappers! :)
Add that additional fat!
alright this is dope, but you're always wearing that denim shirt man
We shot all episodes on the same day. Thanks for watching!
Wow, you are really honest
and that is nice :)
Most commercial soy sauce contains wheat so he should be subbing out Tamari instead -- same with gojuchang, it has wheat in it as a binder, check those labels. Great idea though, stealing for my wife with celiac.
steamcrunk you can get soo many different gluten free soy sauces
My point was he's using a brand of gojuchang with wheat in it for the sauce (it's the first ingredient). He made gluten free dumplings then dumped gluten sauce on them. Anyone with celiac would get sick eating that.
Anyone with celiac would check the ingredients regardless of what some dude on the internet is doing.
You're missing the point. We (people with) all do our DD when we eat out. We just hope people trying to catch the wave of popularity regarding gluten free recipe videos do as well, so have a nice day.
"Gluten free dumplings" Thoughts going in: He's totally going to use soy sauce isn't he? Yep. I mean granted you could probably find a gluten free tamari and be most of the way there, but the moment he used soy sauce it was clear this wasn't about making a gluten free dish.
Don't they use that meat glue stuff in McDonald's chicken nuggets?
source please, it doesnt make sense that McDonald would use it. there are cheaper binders for ground meat such as the egg and corn starch that was used in this recipe.
When the soy sauce has gluten... *face palm*
Not all soy sauces have gluten. Thanks for watching!
destroyed

I AM SO HUNGRY RIGHT NOW
chemist or a cook?..
So, gloves are good. Meat glue, by definition, glues meat... of which all your fingers are comprised... learned the hard way.
It's not like super glue, and it's only a problem if you're working with enough food to feed multiple people, but it's still super uncomfortable after a while.
Oooh good to know.
Oh hell no! Meat glue? your actually telling people to use that stuff? That's insane!
technically its not a dumpling without the dough
what would YOU call it?
u can use a tooth pick
Isn't meat glue bad for you? Why not use a toothpick?
You lose all the juices from the inside with toothpicks and risk the dumplings bursting! Thanks for watching!
Do you say it's bad for you because you actually know that, or because you heard a chemical name and thought it sounded scary? Honest question, I'm not trying to pick a fight.
Griffin Greenberg Read it in an article about fake steaks.
i dont think people eat this recipe for health anyways
Now that you mention it, it is pretty ironic that on one hand, people dont eat it for health, yet it's meant for "gluten-free" people, which is for health haha
Is cornstarch gluten free?
Anyway, there is nothing wrong in consuming gluten unless one is gluten intolerant (Celiac's disease). Over the past few years it seems that everybody has become gluten intolerant. I hate it when a medical condition mutates into a lifestyle aspect.
Good video and cool reciple, but of course a pure meat based dish is gluten free!
Saying it's gluten free is like saying butter is "sugar free" or sugar is "fat free".. big companies do this kind of thing all the time on their packaging and frankly it annoys me.
If someone has a real gluten intolerance and doesn't realize that this is "gluten free" then they have a bigger issue - the fact that they're massive idiots.
The point of this was to make dumplings without the usual flour casing, which does contain gluten.
This is the most Asian and un-Asian dish i have ever seen. He used a basic cooking ingredient from nearly every single (East/South East) Asian country, but it looks so American HAHA
Flying Scout every culture has their version of a dumpling. The title of the video itself explains that it's a fusion dish. You're an idiot.
surely its 100x easier just to wrap the pork ball in chicken skin, then use a bulldog clip to hold the bunched up top together while it fries so when it comes out the skin is crispy but you dont need to muck around with this glue business and plastic wrap...
eat them on camera d:
soy sauce has gluten...
There are gluten-free soy sauces available from some very big brand names out there. Thanks for watching!
@@eater It would be cool if you weren't so flippant about making people sick. You chose to label this as a gluten-free recipe.
meat glue? is that...safe
Have you studied biology before?
It's a general study in highschool but they never explained meat glue.
+Mikie Lee I wouldnt work in a meat glue factory, cause the amounts of meat glue in the air can fuck up your lungs
the 'meat glue' is an enzyme, thus a protein. it's even produced naturally. your body would be able to break it down. as for 'fucking up your lungs', anything can be toxic/poisonous, it just depends on how much is consumed. the labs making these food grade products have stringent policies that ensure the safety of employees, i.e. filtered biosafety masks
Baby J idk ive heard that people got problems from it but it couldve been a rumour
Great for gluten free people, adds flour*
bro the sauce at the end not gluten free. The chili paste contains gluten and so does the hosion sauce. GLUTEN FREE NOT!
So don't make the sauce... you still have the dumplings
+Dennis Brugman just saying its not gluten free!
im pretty sure nearly all soya sauce contain gluten aswel given the fact its made from fermented soya and wheat
Tf are you on about. I'm korean and I'm telling you there is no gluten in gochujang.
Not unless you buy a specific and weird one mixed with no gluten free soy products.
There's sugar, red pepper, vinegar and salt in that red box.
Idk where the gluten comes in.
Too bad there's gluten in most soy sauces.. better check the label.
Unfortunately he died soon after from a heart attack. 😂
Ha ha filth!
Wtf, who would want to eat meat glue?
No.
More like stuffed chicharrones. Dumplings should be able to be eaten fried, steamed, boiled. Boiled, steamed chicken skin is not appetizing.
love how people are going gluten free because they think it is heathier, but then does this crap which is way way more unheathly
This was aimed at people with celiac disease. Thanks for watching!
trinhkets what's unhealthy is your face
What's unhealthy? If you are talking about the meat glue, it's an enzyme that your body actually makes naturally. But if you're talking about deep frying, then you have to keep in mind that one must nourish not only the body, but also the soul.
This dude needs to go
Where?
