Corndog Muffins

- Here's a treat your kids (or grandkids) will love. Better yet, let them help you making it. This is plant based and gluten free, but you can make it "regular" and have a tasty treat in less than a hour. Plus, we get some guest chefs to help us out on this one.
CORNDOG MUFFINS
¾ c. cornmeal
¾ c. gluten free flour - add ½ tsp xantham gum if not already in the flour blend
2 Tbs. sugar
2 tsp. baking powder
½ tsp. salt
1 cup plant based milk
¼ c. canola or vegetable oil
1 pkg plant based hot dogs
Spray vegetable oil
Preheat oven to 400.
Spray mini muffin tins (24 total) with vegetable spray.
Combine cornmeal, flour, sugar, baking powder, and salt. Add remaining ingredients and mix until combined.
Fill muffin tins ¾ full. Cut hot dogs into about 1/2 -3/4 inch pieces and press into the center of each muffin.
Bake for 18-20 minutes.

I would think so, but honestly I have never tried this.
