CARROT CAKE BAKED OATMEAL 2 1/4 cups rolled oats 1 1/2 tsp. cinnamon 1/2 tsp. ground ginger 1 1/2 tsp. baking powder 1/2 tsp. kosher salt 1 1/2 cups lightly packed shredded carrots 2 1/2 cups unsweetened almond milk 1/3 cup pure maple syrup 2 tsp. vanilla 1/2 cup raisins 1/2 cup chopped walnuts or pecans Preheat oven to 375 and lightly grease an 8” x 11” casserole dish. In a large bowl mix together the oats, cinnamon, ginger, baking powder, and salt. In a medium bowl whisk together the carrots, milk, maple syrup, and vanilla. Mix the wet mixture and the dry mixture and stir until combined. Pour mixture into greased dish and smooth out with a spoon. Sprinkle on raisins and nuts and press down lightly. Bake, uncovered, for 32 to 37 minutes, until lightly golden along the edge. Oatmeal may seem a bit soft and wet in the middle but will firm up as it cools. Let cool about 10 minutes before serving. When fully cooled, will be firm enough to cut into squares.
You two work so well together. I have a good recipe for baked oatmeal but haven't made it in a long time. I will definitely try this one. Sophie is like a Roomba in the background cleaning up any bits on the floor! 😂

Could you come up with a recipe for plant based meatloaf ? I use Beyond Meat and did try making a meatloaf but it was very dry ~ any help would be appreciated. Thank you
