Delicious, Crispy, Tender, Juicy, Fried Chicken!
Make a brine consisting of 4 cups water, 1/4 cup salt, 1/4 cup sugar, 8 to 10 peppercorns, 1 slice of lemon, 1 clove of garlic
and a couple bay leaves.
Bring the brine to a boil and simmer for a minute or 2 just to dissolve the salt and sugar. Cool it off. You can even toss in
a few ice cubes to help cool it.
Make as many batches or 1/2 batches you need to cover the chicken you are going to prepare.
Once the brine is cold pour it over your chicken and brine it in the refrigerator for 2 to 4 hours. It is OK as well to brine it over night.
Remove chicken from the brine and pat it dry with paper towels.
Let it rest at room temperature for 2 to 3 hours.
Dredge the chicken in a breading made of 1 cup bread flour,
1 cup rice flour, 1 tbsp. cornstarch, 1 tsp. pepper, and 1/2 tsp. salt.
Fry the chicken in oil at 300 to 325 degrees until chicken is golden brown. Place the chicken on a baking rack (not paper towels) and finish it in the oven at 350 degrees until all the pieces reach 165 degrees.
Let it rest for about 20 to 25 minutes before serving because
it will hold heat for a long time.

I just learned of Steveâs passing. In his honor, I made this chicken tonight. It was truly the best fried chicken our family has ever eaten. Just fantastic! I wish Iâd have had the honor of meeting Steve. Well, thanks to the internet we can still watch and learn from one of Americaâs all around great guys and country chef. Blessings.

I had a stroke in May (5/13/2022)! God didn't take me because he already Has an Awesome cook! You ladies keep up the great work! I cooked a 5 lb chicken in my Ip. Using Steve's brine with some Rosemary and Thyme was awesome. I'm not brave enough to fry a chicken yet but as soon as I am it will be Steve's recipie! Thank you Mrs. Sheila for (and Jen) for keeping him going!

Truthfully watching steve all this time and watching the ladies knowing steve was gone was really hard for me. But the more i watch the ladies the more i realise they miss him to. The two ladies are so fun to watch....they often share stories about steve. Makes me cry writing this. I love this show...they make me feel like part of the family. I haven't seen my family in 5 years.

My mom owned a restaurant . She cut, cleaned the chicken. Made a brine, put the chicken in it. Mounds of it. Then removed what she needed. dried and breaded then it was fried. It was wonderful brined.

I love that Corn Starch trick! Gonna try that in my air Fryer. Another cool trick is to reduce the 4 cups water to 2 cups water. Then after the brine cools to room temperature add two more cups of Pickle Juice to the brine! I'm serious! It is just Awesome! Thank you Steve and you two Ladies! Roll Tide!

I miss Steve's wonderful face so much! Every time I need my spirit lifted I put one of his videos on, Steve was and is an angel. In regard to this video I wonder how long in the oven roughly Steve cooked it? I know until the temperature reached the goal, but I wish someone would give me an estimate of around how long that is?

why don't you do soething gluten free.not all of us can use your receipies,althouth they are all good.help the one one's that can't eat all your great cooking

@@CookingwithShotgunRed also gluten isn't necessarily unhealthy - that's just for those who have an allergy to it. It would be easy enough for the person who wants gluten-free to replace the bread flour with rice flour since rice is gluten-free.
