I think Samuelson is at a disadvantage in Iron Chef because he tells a lot of great stories with his dishes, but his spices and techniques are unfamiliar to lots of judges. Berbere spice is hard to use because it has many bitter notes unless properly heated. Also, he uses risky ingredients and values flavor over proportioning. I think if he westernizes his standards a bit, he might win more often simply because of his judges. Other than that, a phenomenal chef who takes admirable risks
