Chickpeas are actually great with onions, zucchini, and some kind of tomato be it fresh, crushed, diced, or stewed. And I'm not a vegetarian.
I just wanted to take a minute and say thank you for doing videos like this! I am a single mom and I cook for 7-8 people for dinner every night..I dont get paid from my new job until the end of the month and your videos have been so helpful for me to stay on budget! The burritos in this video were amazing and I didnt have to modify too much for my vegetarian. You are truly a blessing!

For the burritos, you alternatively could have shredded the zucchini, sauteed, squeezed the liquid out, and added it to the burrito filling! A great way to sneak in veggies for the people/kids who don't eat them willingly!

My mom was able to look in the cabinets and figure out the best “combinations” 😊 She raised 5 children all in her own and I realize now that we were poor but I never would have known it then. She was amazing and I miss her so much!
I grew up with a Mom who usually cooked Meat, Potato, Vegetable meals. She would include a salad of Lettuce, Cucumber, Tomato and made great Corn Chowders, Baked Beans and the very best Beef Stew and Corned Beef Dinner . But no pasta dishes, chili's, tacos or pizza those meals came later on as food changed during the 70's and convience foods became popular. I am blessed I had access to both types of cooking. And that she taught me to be frugal - I enjoy your videos as they too encourage me to be creative

It's so weird that in the USA you can't get fresh produce on a budget. In the UK, it's cheaper to buy fresh than takeaway, or "non fresh". Aldi is the best for that too here. I love watching your videos though. Watched them through lockdown to give me some ideas x

An easy and quick way that I make zucchini is by dicing them and tossing them with olive oil, breadcrumbs, parmesan cheese, black pepper and salt in the air fryer for about 15 minutes and they are a favorite.
It's things like this why I purchase my ground beef as frozen patties (same price usually as fresh two pounds). It's very easy for me to make simple dishes like this and throw a 1/4 or 1/2 pound of ground beef to it, while still keeping within an intended budget. (But I find I'm going meatless more and more without even really noticing.) Not only do I have the benefit of controlling budget through portion size, but I don't have to remember to thaw my meat ahead of time. It thaws as you cook it and is always ready for me.

Another thing you could do with the Zucchini is to grate it, squeeze out the water,fry it off with garlic and onion and add to the pasta with cheese.

I really like the idea of the zucchini and tomato pasta. We have one zucchini and one tomato that needs used up so I'm definitely going to try that out for tomorrow's dinner! Probably use like a half packet of seasoning or just improvise on that part.

Have you ever made a video about making individual (one person) meals to freeze and give to elderly people who live alone and need easy to heat meals? Or can you guide me to somewhere to make these? Also how do you suggest packaging them? We don’t have much money but would like to help others. It seems like if you can make meals for so cheap it could be divided into individual servings to share! Thank you, I am not much of a cook but your meals seem pretty easy!
@Gloria Elswood, if you use the budget meals she makes, you can either freeze a portion the casserole type meals in a container, or find some divided containers and use those for the burrito and zucchini meals. The key will be finding the containers that can go from the freezer to the microwave or oven. And whether you want the containers returned for reuse. I think most of her recipes would work. It's a lovely idea to share with elderly neighbors. Blessings.

I love the reminder that starches are blank canvases, almost anything you make with pasta, rice or potatoes can be interchangeable and thus provide a bit of variety when on a budget. For instance, I often will have cheesy rice instead of mac and cheese, or meat sauce with rice or over a potato instead of spaghetti.

I make enchiladas with flour tortillas, ground beef inside, and a can of chili sprinkled with cheese on top. This reminds me of that, but seems a little more budget friendly since it has no meat. It looks yummy though.

I love bean burritos, and I have a can of refried beans and kidney beans, lots of options. And I have cheese, plenty of shredded cheese.

I’m starting to try to budget more so I can save up to invest. I’m trying to get my sons dad to cook every other week. Hopefully it works out because 1.) it’s a week I have to focus on other things cooking dinner takes up in time and I’m hoping he’ll actually pay for the meals he makes (but who knows) which will help me save up as well.

You seem like a wonderful person! These are helpful when I get I get into a food rut. I love using chickpeas and found that her liquid from canned chickpeas can be utilized as egg wash. You won't get the same flavor but its a stronger glue

I was going to suggest adding Italian seasoning, or herbs like rosemary, thyme, or parsley.
Little tip to add more flavor to the burritos, spray with olive oil or brush on and warm it on the burner with garlic or fajita seasoning if you have it. Then put the filling 😊
I love your recipe ideas! I think they are great kid friendly ideas, and goodness knows sometimes we need some easy flavorful meals for those hectic weeks. I would love if you did a budget video for the gluten free folks we know and love (my 16 yo son has a sensitivity). Thanks for these :)
This is one our go two meals except we use black beans cheese and occasionally meat inside and enchilada sauce on top.

Hmmm. I have beans that I overcooked a while ago and couldn't find a use for so I froze them. I'm thinking this is a good use to thaw them out for.

I like to make my own rice-a-roni. I put vermicelli in the food processor and grind until it's about the size of rice. How ever much vermicelli you have, mix with the same amount of rice. Put in sealed container and mix with whatever flavor of broth you prefer. BINGO! You have any flavor you like and you know what's in it.
I love the pasta recipe! Zucchini is such a great way to "replace" the meat in a bolognese type sauce, for a cheaper price. Other things that I have tried, tested and loved are aubergine and red lentils, but chickpea is something i yet have to try! Thank you :D

I made the burritos and my rice box did not come with the flavor packet and it was the same package from Aldi. It was already mixed in. So what can I use now instead of this flavor packet in the pasta recipe. The burritos were a big hit. Loved them
Dawn, I would say some bouillon or broth base or you can season it with Italian seasonings, salt and pepper.
