RECIPES:
Easy green smoothie:
1 ripe banana
1 Tbsp hemp seeds
2 Tbsp ground flax seeds
3 large handfuls baby spinach
2 cups frozen mango
fresh OJ (or plant milk)
BLEND and serve
AVOCADO TOAST
toasted sourdough bread
then add mashed avocado
spinkle salt, pepper, and garlic powder to taste
top with purple sauerkraut
CREAMY RAMEN NOODLE BOWL
4-5 rice ramen noodle cakes, cooked according to package instructions
sauté your favorite veggies in veggie broth like:
broccoli
bell pepper
carrots
mushrooms
onion
after the veggies cook down (about 5 minutes) add:
2 Tbsp coconut aminos or soy sauce
splash of rice vinegar (about 1 tsp)
2-3 Tbsp tahini
1 tbsp maple syrup
more veggie broth (about 1 cup)
1/2 c purple sauerkraut or vegan kimchi (pieces and juice)
saute for a few more minutes until everything is cooked down and saucy.
mix together with cooked and drain noodles.
top with your favorite toppings like:
drained/rinsed garbanzo beans
baked tofu
tomatoes
green onion
sesame seeds
cilantro
sriracha
serve and enjoy
BURRITO BOWL
lettuce greens with lemon juice squeezed on top
basmati rice
your favorite beans (rinsed, drained and heated for 5 or more minutes. add spices and veggie broth if desired)
sautéed mushrooms, garlic, and onions (I sautéed the veggies in veggie broth and added salt and pepper)
your favorite jarred salsa
guacamole
Serve all together and devour

Ha, yeah, 8 months olds are easy to travel with -- they nap and don't do a whole lot anyway. I drove across the country with an 11 month old. Its when they got older car rides get harder, especially the potty training years!
@@stitches318 I think it varies per child. Lots of babies won’t nap in the car and will just cry

I've started my journey by recently going vegetarian first.

Love your videos! One thing that would have been interesting is if we could see what Andrew and the boys ate at the baseball game. Finding halfway decent vegan food outside the home is a challenge, so some ideas would be helpful. 🙂

This made me miss California so much! It's where I'm from but I live in Tennessee now. The salsa Andrew got was from Sprouts and that's my favorite store and we had an orange tree in our backyard as well! One of our houses had an avocado tree and I WISH I had that now!

Recipe suggestion: after cooking the veggies add a bit of coconut secret teriyaki sauce and tahini or homemade cashew cream. It's divine! Creamy teriyaki!

Hey Ellen, my nephew and his girlfriend are vegan a few yrs now, and I've suggested them your channel since they're planning to have a baby soon, but I just realised your subtitles are automatic English generated and since we're Italian their English is not as fluent as mine, let alone understanding entire conversations. They're trying to figure out slowing down the vid to understand your tips and suggestions especially because the girlfriend is interested in pursuing a healthy vegan pregnancy and home birth which you already provided in sharing.
I'm helping by translating as often as I can but it's becoming an issue because they're becoming obsessed with your channel so i was wandering if you could help by providing multilingual subtitles, italian included. Hugs!
