    You should have added some nutritional yeast flakes to the vegan "bechamel", it would have given it a cheesy flavour... or maybe even some violife vegan cheese... that would work well too

      @@yol1982 It's a vegan diet staple, and *really* good for you to boot! Just don't try it plain or on popcorn, I don't care what others say, it's nasty that way lol But definitely worth trying! If you just want to try it in a dish, a lot of grocery stores have it in their bulk section, or you can find it in jars/bottles.

      Agree! Honestly I like when chefs try vegan stuff... but, these guys, like most of the chefs like this, tend to not like vegan stuff. And they tend to be horrified at even trying to make it. They tend to be overly critical about it... And so.... why do it? Because it will be bad... because... they don't know what they are doing. Because they don't eat it. They don't like it. They don't make it usually. It's not really doing the vegan food any services by publishing shows about vegan food that doesn't really know that much about vegan food. It just makes vegan food look bad.

    Top tip to make meatless sauces taste really ‘deep’ and ‘meaty’: a spoonful of marmite stirred into the sauce before reducing doesn’t make it taste like marmite (as someone who hates it on toast I can attest to this) but it makes it really dark and delicious 😋👌🏼

      @@VeginMatt I use store bought oat milk and do use a flour & oil roux, just in case you also have that option. For lasagne I leave out the cheesy flavours and just use a bit of "chicken" stock and a generous pinch of nutmeg. We've had plenty of non-vegans ask us for our lasagne recipe ;)

      @@Ac3OfWands thanks. I have made bechamel before but have never used oatmilk (homemade or store bought) so I was curious about the "missing" roux in the first recipe. I generally prefer to use the cream off the top of canned coconut milks whenever I cook sauces or (cream of) soups; although I have been thinking of at least trying oatmilk lately.

      Fully felt the same way. I also liked that it had pretty basic ingredients that you could find at more or less any local shop with decent selection. I feel like us vegans already know how to sort out a vegan creamy sauce, so it's like the guys are signalling to our non-vegan friends, "Hey guys! Now you know what to make that vegan friend you want to have come over your house that isn't a salad! Take note!"
      That's why I think Barry made sure to be like, "Most lasagne noodles are egg free, but please check first". If you're a vegan, you're always flipping the box around to read the ingredients. Your aunt Pam, who is a lovely lady, wouldn't think to check, but the gentle reminder is nice. Same that they don't put any Weird Vegan Ingredients. If you're vegan, and you see that recipe, you're gonna throw in some nutritional yeast, or maybe some miso, or tahini, or mustard, or some combination thereof. But your best friend's dad, who is making a good effort probably wouldn't. They made it accessible for a variety of audiences, and I think that's pretty great. :)

    I've just made Ben's Lasagna for the second time, and I've got to say, it is really, REALLY good. I'm not able to buy tellegio where I am so I've taken the written recipe's suggestion of subbing in marscapone, and also added some cheddar to make up a bit for the milder taste.
    I'm in Canada, and over here (I think in the States too) it's quite common for cottage cheese to be a popular choice for home-made lasagnas. I think perhaps next time I will go half-and-half with marcapone and cottage, as the recipe is rich enough that it's actually fairly easy to under-season (made that mistake my first go-round). The meat sauces made here often have more of a 'marinara/pizza sauce' flavour to them as well, so for fun I might try that to bring a bit of that element in as well. The ragu Ben's recipe yields is really delicious and unctuous, and has a fantastic quality. It definitely has a 'European' feel to it that tastes a little restrained to a North American tongue, but has much more depth than you would generally encounter over here. Standout. Now that I've made it a couple times and feel fairly familiar with it, I'm excited to experiment with the flavour profile here and there and see if I can make something that really brings the best of both interpretations to the table :D
    Thanks so much for the fun video and excellent recipe! I have a close friend who is a very strict vegan, so once quarantine restrictions relax I will be having her and her husband over and definitely be giving the vegan version a try too. Love from Canada!

    We are from Sicily and we use Ricotta with egg, Parmigiano-Reggiano , fresh Mozzarella, and dried mint ( so the cheese does not turn green) when we make lasagna. The sauce is made with short ribs, several other meats, and red wine, not white. Try it sometime. It’s delicious and authentic.

    I don’t know why Jamie’s getting so much stick. Obviously the lasagne looks grim but to be fair it is being done in 30 minutes. The execution could’ve been better but a 30 minute lasagne is never going to look amazing

    Oh Ben... Well, I'm in love! Lasagna is and has been my favourite dish since I was 2 or 3. It was always homemade (I was a lucky little boy I know), but this takes it a step further into heaven. Thank-you!

    Guys, just came home after a day workin the line, completely cooked out and about to throw some beans on some toast. Watched this over my cuppa while my phone charged and now imma go make a beef/ butternut bechamel/ feta&goats cheese lasagne. Thank you, thank you, thank you! As much as I love the big showy travel vids, the stuff in the sorted kitchen fkn rocks!

    Is this type of lasagne a British thing? I was always taught to have more cheese like mozzarella and provolone. Meat sauce made with Italian sausage and ground beef maybe red wine plus layers of ricotta that's been blended with some herbs(oregano thyme rosemary) eggs.and parmesan and or Romano. Its heavy. Cheesy and flat out delicious

      It’s an Italian thing to use bechamel and not loads of cheeses. It’s an American thing to add a lot of mozzarella and ricotta and exclude the bechamel.

      @@FirstLast-pk2of As an American, I remember in my early 20's "discovering" how well a bechamel (or 'alfredo sauce') goes with a lasagne when someone used my ricotta. For quite a while it was a "secret recipe" of mine that people always wanted. Funny how that works out!

      @@SortedFood I am Italian and I am not that offended by Jamie's deconstructed lasagna: it could improve a lot with just a few step, but it is still food. The vegan preparation instead is a crime against humanity: it's basically a lentils stew in which he have thrown some pasta sheets...

      @@Beregorn88 Tbh I'm sure it tastes fine but it's no comparison to an actual ragu and besciamella, like no comparison at all. And I'm certain that cooking the lasagne sheets like that is worse for texture and taste than it being cooked in the sauce(s) in the oven.

      It would have been better if he took the time to do the layers and gratin, it's not that much work/time. But I don't think it's "offensive." The only way that would be offensive It's if he tried to served it as a traditional lasagna in an Italian restaurant.
      Where I live we make eggplant lasagna and plantains lasagna, and I have eaten them in Italian homes. No one has died of shock, hahaha

    My stomach spontaneously started to speak as Ben assembled his lasagne... "get in my belly!" Hands down, no contest. But I'm so impressed with all the boys though - what strides they've made in 5 years. And I love that Jamie makes the happiest mistakes in the kitchen and keeps everyone laughing... I'd happily eat Jamie's lasagne too.

      @@ingriddubbel8468 It does. A really good meat sauce takes 6-8 hours to cook, and than need to rest overnight. You can make a good ones in half a day, but it will not be the best.

      @@Beregorn88 what's the point though it just becomes pompous to make something that takes that long. Why bother? 2 days to make and 10 minutes to eat. There comes a point when it becomes pointless to take so long to make something. The one Ben made looked extremely good.
