Step 1: Make the Chicken Carnitas
Ingredients
* 2 chicken thighs
* 1 cup lard
* Salt and pepper
1) Season chicken thighs with salt and pepper. Heat a non stick pan on medium heat and add chicken thighs, skin side down. Cook for 5 minutes on medium heat until the skin is rendered and crispy.
2) Add lard to the pan and allow to melt. Throw in the oven at 325 degrees for 3 hours, until chicken is nice and crispy.
3) Remove chicken and let come to room temp before shredding.
Equipment
* 1 medium sauce pan
* Tongs
* Cutting board
Step 2: Make the BBQ and Habanero sauces
Ingredients
2 confit chicken thighs
BBQ sauce
* 1 tsp canola oil
* 1/4 red onion
* ½ cup vinegar
* ¼ cup ketchup
* 1 chipotle in adobo
* 1/2 cup brown sugar
* ½ tsp salt
* ¼ tsp black pepper
Habanero sauce
* 1 tsp canola oil
* 2 habaneros
* 2 baby carrots
* 1 tsp chicken bouillon
* 2 Tbsp brown sugar
* 1 Tbsp vinegar
* ½ cup water
* ½ tsp salt
1) Heat a medium saucepot on medium heat and add canola oil. When the oil shimmers, add your red onion and sautee for 5 minutes, until softened. Add your chopped chipotle chili, ketchup, vinegar, brown sugar, salt, and pepper and cook for 10 minutes.
2) Puree the sauce in a blender, then strain, and add back into the pot and cook for an additional 5 minutes, until thickened.
3) Shred duck confit by hand and add to the sauce.
4) Heat a small sauce pan over medium heat and add carrot and habanero. Sautee for 5 minutes, until softened. Add chicken bouillon, sugar, vinegar, and salt.
5) Puree in a blender then strain and add back into the pot to cook for an additional 3 minutes.
6) Let cool.
Equipment
* 2 medium sauce pots
* 2 silicone spatulas
* Vitamix
* Strainer
Step 3: Make the corn pancake and assemble
Ingredients
* ½ red onion, thinly sliced and marinated in vinegar
* 1 tsp lard
* 1 box Jiffy cornbread mix
* ½ cup flour
* 1 egg
* 2/3 cup milk
* Salt and pepper
* ½ Tbsp butter
1) Add flour, egg, milk, salt, and pepper to the cornbread mix and let sit for 5 minutes.
2) Heat a non-stick pan on medium heat and add lard.
3) Add pancake batter to the pan and rotate your wrist around so it coats to the sides. Cook on medium heat until you see bubbles forming on top of the pancake, about 2 minutes, then flip and cook for an additional minute.
4) Remove the pancake from the heat, then add a scoop of your BBQ shredded chicken mixture to the middle. Fold the pancake over.
5) Add a shmear of BBQ sauce to the plate. Add the folded pancake on top. Drizzle habanero sauce over the top, then garnish with thinly sliced red onion.

I would love to see a cooking competition between CZcams chefs and I think Josh would be great in it because he's so creative and can think outside the box. It would be a great opportunity to cross promote different CZcamsrs.

My parents used to have chickens they will literally eat anything! Especially if it comes from you my dad accidentally dropped one of their eggs and they ate it😂 also ducks are known to actually pick on chickens if you have both of them😂😂 I will say I agree there are definitely plenty of smarter birds out there than chickens that’s for sure😂😂 A bird that’s not always liked by humans for some reason or another, being the crow are actually very highly intelligent birds.😊 hope you found all that interesting and y’all have a good day😁

Downside to those shows is the winners are predetermined. Chopped is worse with the chefs knowing what's in the basket before opening it.

Can I, for just one second, highlight how awesome it is that josh is producing a real ass cooking show in a way that highlights his quirky personality while still teaching us a bunch on the way.

I love fancy fast food, but I also think it's nice seeing Josh make super delicious food within the constraints of a reasonable budget.
It just shows that even with super cheap ingredients, with the right knowhow you can make some really good food. And it's nice seeing his thought process behind how he uses certain ingredients.

Idea for a new series (sorry if this has been suggested before).
Mythical Crew bring Josh a family recipe (the cooked version, not a recipe). Josh and the Mythical Kitchineers must work to deconstruct the dish and try to create an exact replica. Crew member is brought back to blind taste the OG version and MK version and pick which is the original and which they prefer.

Don't be deceived, for while they wanted you to think they were a perfect nuclear family, behind the scenes was a nasty divorce and custody battle. Neither wanted the baby carrots and were actively trying to offload them onto the other parent. This ultimately ended in the babies being sent to an orphanage factory, where they were shipped off with other baby orphan carrots to the produce section for your consumption.

Correction because I was remembering wrong: this was a live event and Bobby Flay being his cocky arrogant self stood on the counter on top of the cutting board and shouted at the crowd to rile them up.
This offended Morimoto who is a very serious traditional Japanese chef. Morimoto said that Bobby Flay isn't a real chef because a chef's cutting boards, knifes, etc should be sacred to them.
Personally I found it very annoying that he stood up WITH HIS DIRTY SHOES where people cook and prepare food. I also have just never liked his arrogant attitude and personally I think his dishes are kinda boring.

Damn, surprised I had to come so far down to see this. I’m very happy that particular bit might be in the past. While kind of funny, it was pretty clunky when all you want is an outsiders perspective.
@@Makawav it was a funny bit...but it definitely got a bit tired and on some of the dishes just didn't work at all. I love that they were trying to be respectful of social distancing but glad to see now with more people being vaccinated and the fact that most of the crew was probably essentially a safe "pod" they can move on.
I think Josh and Russel Brand need to have a long conversation and record it. They may break time itself.

Fantastic job! Please make more of these Cheap/Fancy videos. The Fancy Fast Food ones are fun, but this i can actually make. I felt like I learned a lot more from this, and seeing how to get the most out of a tight budget. Would love to see more
I grew up near the Jiffy Mix factory, and they would take us on school field trips to tour the factory. At the end of the tour they gave all the kids a goody bag with a box of mix, a recipe book, and this weird little blue pompom thing with googly eyes and a chef hat.
I don’t know what’s worse, the fact that yall uploaded this at 4am or the fact that I’m still awake at 4am because of math homework

Actually in the show Throwdown with Bobby Flay what happened was the people being challenged were told a story from food network usually that they were getting their own profile or something. Meanwhile Bobby was told who he was going up against with 2 days to prepare and create his challenging dish. And Bobby almost always LOST. It was great.

I made these for dinner tonight and they were a hit! The only thing about Josh's recipes is that what is said/done in the video does not always match the recipe listed, so I have to do a bit of guessing. But that just makes me a better chef.
