Laura, the white sauce it's called, originally, "All i oli" ("garlic and oil" in catalan) but spanish speakers adapted that by saying "alioli". The difference between the two is their pronunciation (LL vs. L) that for non native catalan the LL at the end of a word it's a little bit tricky, so instead they pronunce it as an L. I hope it makes sense 😅

The only time I ever had this was in Avila, Spain, with a pitcher of Sangria and fellow travelers. Served with both sauces and absolutely amazing! Looking forward to trying your version. ❤

As I said on IG, it is "alioli", the name comes from Catalan "all" for garlic and "oli" for oil🤷♂️. FUN FACT , "patatas alioli" is also one othe most famous tapas in Spain. Anyways they look delicious and would have your bravas right now lol.

Yes! Plus, the original recipe calls for just garlic and oil as main ingredients, and the creaminess of the sauce is given by the two of them. It is true that it's easier if you do it with mayo but the "original" recipe it's just other level, mind blowing!!! When I go to a bar I always ask for bravas and croquetas 🤣🤣🤣🤣
@@Kurilah you're right, the original alioli is only an emulsion of olive oil and garlic traditionally made by hand in a mortar. However, it is very common nowadays to use mayo as a shortcut.🤤
@@Kurilah croquetas are the greatest invention on earth! Not a single thing goes to waste in my house! Almost everything can be turned into a croqueta! Lol

I always put a chicken stock cube/pot in the cooking water for any par boiling, and if reduced sodium, just a touch of salt…. Love this recipe Laura, reminds me of when I lived in Mallorca when I was young girl for just over a year 💕👍
