The ultimate Patatas Bravas | Potatoes with spicy sauce

  • I am a proud “Madrileño” and in my hometown, we pride ourselves on how good our patatas bravas are. There is something so special about traditions, they are there for a reason and are unquestionable in a community. For whoever is not from Madrid it is difficult to understand why we keep banging so much about it if really, this dish is just humble potatoes with a spicy tomato sauce. But it is so much more than that for us, we meet over “bravas” like in the UK you would “meet for a pint”. It is the ultimate tapa. Every tapas bar has them on the menu and everyone makes them differently but the one thing in common between all of us who cook it is that we all try to make it the very best we can. Like with croquetas, we measure the quality of a restaurant by how good or outstanding our bravas are and let me tell you, it makes a huge difference to how busy your place is. It comes without saying that in my tapas bars, we make the best Bravas this side of Madrid ; ) and this is my recipe adjusted to be cooked at home, where we never eat patatas bravas, we always go out and enjoy them with friends and a good beer.     Gracias for sharing this one and I did this one a little while ago, following all of your steps, and it turned out absolutely delicious!! I'm doing your Patatas Bravas again tonight and our taste buds are salivating just knowing what's coming our way. When I compare your recipe with several others, your one is definitely my favourite. I have always made my own Mayonesa but this one is perfect. Love your work and the passion you show while making all of these incredibly tasty dishes! BTW, whenever I cook any Spanish dishes, I'm always accompanied with one of my favourite Spanish Vermut!!! Salud Amigo 🍷

    Great recipe for patata bravas. Instead of baking, I used air fryer at 375 here in Utah since we are higher elevation. I was never able to make aioli and was happy to try your trick. Thank you!❤

    Great recipe Omar , especially the quickest , easiest aioli I’ve ever made. We had them along side some pink iberico secreta bellota and gordal olives from a Spanish fine foods retailer here in Yorkshire. It was snowing outside , but it was summertime in Spain in my kitchen!

    I saw the coriander (cilantro) being chopped but never saw it added. I assume sprinkled along with the chopped parsley.

    Great recipe Omar! I made seafood paella based on your recipe couple of days ago, it was excellent. I had a pleasure being in London on one of your cooking classes years ago, it was a great experience. I'm still often using the marinade for poultry from your recipe we made then- Spatchcocked quail with a roasted nut sauce

    Thank you for not frying! If there's something I hate to deal with making a spanish recipe it's the amazing amount of excess oil! :D I know you guys are sure used to recycle or something but I hate to have another bottle/bin taking place in the kitchen...Anyway, thank you for not frying :D

    I have a question about the tomatoes. On other videos for Patatas Bravas, there are Spanish people saying there is never tomato in the sauce. That it's just thickened with flour. Are these variations in different cities?

      Yes there are differences. I have never seen this recipe like he is doing but looks good so will try something different.

      The original recipe didn’t have any tomatoes, since it originated in Madrid during the Spanish civil war and fresh products such as tomatoes where not always available people used long lasting products but since then the recipe have evolve and I believe in order to make it easier and in more amounts restaurants have include the ground tomato, also, the tradicional Madrid bravas don’t have any alioli, we call that a mix, and if you order a half and half you will have a half plate of bravas and a half plate of alioli potatoes but not mixed, on the other hand if you go to Barcelona they almost always add the alioli on top

      If you mean a jug blender, yes you can, but you will need to add the oil slowly so it emulsifies correctly. It's a completely different technique
