Original Fig Cookies (Strawberry version below)
Filling:
1 1/4 cup dried figs
1 cup water
1 cup orange puree (blended peeled orange) OR orange juice
Dough:
1 1/4 cup almond flour
1 cup oat flour
2 tsp baking powder
1 tsp vanilla extract
1/2 cup date paste ( • The Best Refined Sugar... )
1/4 cup + 2 tbsp nut or seed butter ( I used cashew)
pinch of salt (optional)
Instructions:
Combine filling ingredients in a sauce pan and simmer for 30-40 minutes, or until mixture is thick.
Allow to cool completely. Process until smooth.
Prepare dough by combining dry ingredients in a bowl. In a separate bowl, combine date paste, vanilla, and nut butter. Mix well until combined. Add dry ingredients to wet ingredients and mix until dough forms.
Place dough on a parchment paper and roll into a rectangle approx. 10 x 15 inches. It should be approx. 1/8 - 1/4 inch thick. Cut this rectangle down the middle to create 2 rectangles approx. 5 x 15 inches. Add filling down the center of the rectangle. Using parchment paper, gently lift and bring each side of the dough together. Using the parchment paper, gently turn your roll over so the seam is under the roll. Using a sharpe knife cut your roll into even sized cookies. Mine were about 2 inches. Place on a parchment lined cookie sheet. Bake at 350 for 10-12 minutes. Allow to cool.
Store these cookies in an airtight container in the fridge. They are even better the next day!

When I was a pre-teen, we had a pear and fig tree in our back yard. Those figs were amazing!! This reminds me of how much my mother loved fig newtons. I wish she was still here, I would make this recipe for her.

With spring around the corner, I'm definitely looking forward to fruit recipes!! This one is going in the favorites, I have a bunch of nut butters to use up, and that dough would be perfect with a chocolate hazelnut butter for little debbie rolls, I'd use coconut cream for the filling.

I made these and EVERYONE who tasted them loved them. Mind you I made them because the recipe looked good and seemed easy. I had only tasted fig newtons once before that and had never even seen the fruit!😂 I had to ask the store attendant to show it to me. But they came out great!!! I could only make strawberry as I didn’t have enough figs. Thanks so much for this recipe!!

OMG I was very excited when you posted this recipe. I definitely intended to try it, but then as the Jewish holiday of Purim was approaching I got an idea to use this recipe to make the cookies Hamantashen. They came out GREAT!!!
After rolling out the dough, I cut them into circles, put filling in the center and then pinched into a three corner cookie. The figs I had were very dried out, so instead I used unsweetened, dried cherries and strawberries as my filling. Super grateful for your recipe!!!

I just finished making the original fig recipe. I made the date paste and cashew butter so it took me a little more time. But seriously these are so so so good! The date paste, cashew butter and vanilla mixture would be great in other things too, seriously that mixture was delicious I might put it in overnight oats. Thank you for sharing!

These are delish. I didn't roll mine thinly enough . So I'm trying again tonight. I have new silicone baking mats that are a wonderful, nonstick substitution for rolling out dough. Thanks for this, they went quickly

Made mushroom wings with cherry barbecue sauce and strawberry and red pepper juice. Almond flour tasted superb (ate spoonfuls) with some date syrup.
Most enjoyable time in the kitchen and smelling the strawberries and pepper as I raise my glass to sip. Everything absolutely Yummy, yummy, wonderful

Yes, I was eating those at one time, but they have Cane Sugar, Brown Rice Syrup, Canola Oil, and some other ingredients that I would no longer eat, so these are a much healthier choice.

Your recipes and videos are amazing. If you could also include information on how to store and how long they keep that would be amazing. Also, if some things can be frozen like curries and maybe breads that would also help. I like to cook in batches and then freeze to have later for those lazy days. Thank you! ❤

Wow, so yummy looking cookies. I do not know the store bought original - but I will sure try your recipe! I habe all ingredients in my pantry and fresh strawberries too. My sugestion: use only a little bit additional water for the filling with strawberries, they are „fruity water“ already.
