Exceedingly Good Angel Cake Recipe...

  • These are very popular in the UK. Angel cakes are a soft and delicious, tri colour, layered cake, not to be confused with the American, Angel Food Cake.
    These little beauties have been around since the late nineteenth century and they are also one of Mr Kipling’s most popular bakes. Traditionally they are pink, white and yellow and if like me, you remember having them as a child, I’m sure you will enjoy watching along. Today I am making the recipe but stay tuned for next week when I will be building the layers and completing the cakes…

    Ingredients
    225g butter & trex (100g & 125g)
    225g caster sugar
    200g egg whites
    100g yoghurt
    1 tsp vanilla extract
    280g self-raising flour
    1 tsp baking powder
    Pink food colouring
    Yellow food colouring
    Buttercream or whipped cream
    Coloured Sugar decoration
    Method
    1) Preheat oven to Gas 4/ 180’C or 350’F
    2) Lightly butter a large 6 hole silicon muffin tray then line with a circle of baking paper to cover the base of each hole
    3) In a large mixing bowl cream together 225g butter and 225g caster sugar
    4) Add the 200g egg whites in thirds, making sure the whites are fully incorporated before adding the next third (mixing well at this stage makes the sponge light)
    5) Add 1 tsp vanilla extract, 100g yoghurt
    6) Sieve in 280g self-raising flour and 1 tsp baking powder and fold in gently until the flour can no longer be seen
    7) Separate the batter evenly into three smaller bowls and mix pink (or a little red) food colouring into one, yellow into the second and leave the third bowl white
    8) Almost completely fill the muffin cavities with the coloured batter so you end up with 2 muffins of each colour
    9) Bake for 20 mins or until a cocktail stick inserted into the centre of each one comes out clean. Leave to cool completely in the tray
    10) Remove from the tray and layer each cake into three
    11) Mix the colours and sandwich the cakes together with your chosen filling so that each new cake has three different coloured layers
    12) Cover with cream and decorate with pink sugar
