Indeed, there are a very large number of Tex-Mex places anywhere you go. If you have a significant Hispanic population, there are taquerias on every other block or strip mall. It's inexpensive, easy and fast, and generally very tasty.

Tex-Mex is a modification of traditional Mexican food that was popularized in Texas. Sit a Californian, a Texan, a New Mexican, and an Arizonan together and ask where the best Mexican food is, and watch the sparks fly. But, as an Arizonan, I would say, I've gotten amazing tacos in all of of those states. But also, Mexican food culture is so ingrained in the US, you can find good tacos in just about every state these days.

To create a fusion of Mexican and Scottish flavors in a taco, prepare haggis and chorizo tacos with whisky salsa.
    Ingredients:
Filling: Haggis, chorizo, onion, garlic, smoked paprika, cumin, salt, pepper.
Whisky Salsa: Tomatoes, red onion, jalapeño, cilantro, lime juice, Scottish whisky, salt.
Tacos: Tortillas, lettuce, cheddar cheese, sour cream.
    Instructions:
Cook the Filling: Brown chorizo, then sauté onion and garlic. Add haggis, combine with chorizo, season, and cook.
Make the Salsa: Mix tomatoes, red onion, jalapeño, cilantro, lime juice, whisky, and salt.
Assemble the Tacos: Warm tortillas, add filling, top with lettuce, cheese, whisky salsa, and sour cream.
Serve: Enjoy the fusion tacos with extra lime wedges.
This dish combines the hearty flavors of haggis with the spiciness of chorizo and a unique whisky-infused salsa.

Pinto beans are cooked with garlic, onions, a ham hock or bacon, ancho chiles, jalapenos, oregano, cumin, tomatoes, salt, pepper, and beer! You can omit the beer if you want. Then later you can make them refried by letting them cook down so the liquid is gone and you mash them and add some cream or butter. Delicious!

I only been to California once but my brother lives in San Jose area. It’s not cheap to visit California so I can’t say when I’ll be back there.

I live in the Pacific Northwest in a town of around 25,000 people and we have probably a dozen VERY good Mexican restaurants. Call it Tex-Mex, or New Mexican, or Cali, it's all good.

Tex-Mex is a style of food. It originated in Texas and takes Mexican influences and gives them a Texan style. You can have Tex-Mex all over the US but that doesn't mean it's as good as you can get it in Texas.

Refried beans aren't pretty, but they are packed with flavor! We have these puffy tacos in Iowa, its not just a Texas thing. If you ever have a chance to try tamales don't pass it up

In Texas, Charro beans are very popular too. These "cowboy beans" are not mashed but served whole, usually cooked with bits of barbecued beef brisket, garlic and onions - super yummy. I actually prefer Tex-Mex food to most traditional Mexican food. Texas Chili is to die for. Nothing like a beanless "bowl of red." We travel through TX at least once a year wintering over near the border where it's nice and warm.
We'll often make day trips across the border into Mexico as there are many things much cheaper in Mexico than in the US. We can get prescription drugs there for about 5% of what they cost in the US without a prescription too, so there's no need to see a doctor if you know what you need. Medical and dental and optical care is much cheaper there too. I had an impacted wisdom tooth extracted for only $80 including x-rays, and 2 injections in a state-of-the-art dental facility by a dentist who got his degree in a US dental school. Just the x-rays would have been more than that in the US. Many other things are cheap there too, such as: restaurant food, tequila, honey, vanilla, shrimp, etc. I get $2 shoeshines and my wife gets her hair done for only $6. The same lady's hairdo would cost $40-$50 here. You just need to know where to cross, as it can get dangerous at the wrong border crossings. We like crossing into Neuvo Progresso from TX and Los Algodones from Yuma, AZ as they are both super safe and friendly places. You should visit us one day.

Some Californians claim that Cal-Mex food is healthier, with more of an emphasis on fish and avocados and more veggies. The beans are served whole, not refried. Tacos are crispier. The California version tends to use more garlic than Tex-Mex.
Texans say Tex-Mex puts more emphasis on the cheese - like with the cheese enchilada and meat sauce. According to some aficionados, you can tell the difference because Tex-Mex uses Hatch peppers in rellenos, while Cal-Mex food uses Anaheim. Also, some say California chips are thicker than their Texas counterparts.
Some just feel that Tex-Mex uses more processed foods, while Cal-Mex uses more fresh herbs and cheeses, lean steak and chicken. Others take exception to the processed statement, but do acknowledge that Tex-Mex foods are generally heavier.
Some note that black olives are found more commonly in Cal-Mex, but rarely in Tex-Mex. And they describe fish tacos as more of a California thing. They also say that in California, you will find a greater variety of cheeses, while in Texas, the emphasis is mostly on cheddar.
Many Tex-Mex experts say that Tex-Mex goes heavier on the cheese, and he adds that it also has deeper, richer flavors, and is spicier.

Hey Andre, when commenters say this and that its mostly negative right? That's just politics! You are a tourist (by video right now of course) and have no obligation to agree or disagree with those comments. For every negative comment there are so many positive things. Even in strife America is still amazing and beautiful. So don't let negative's throw shadows on you fun...
